A. Deskripsi Praktik
Tiramisu
Tiramisù adalah kue keju khas Italia dengan taburan bubuk kakao di atasnya.
Kue ini merupakan hidangan penutup yang dimakan dengan sendok, sehingga
digolongkan ke dalam hidangan "al cucchiaio". Kue ini tidak dibuat dari adonan dan
tidak dipanggang.
B. Resep Singkat
Tiramisu
No Bahan-bahan Kuantitas Persiapan
1. Eggs Yok 6 Pcs -
2. Egg White 6 Pcs -
3. Segitiga Biru’s Flour 150 Gr -
4. White Sugar 150 Gr -
Metode :
1. Whip the Egg’s White and Sugar
2. Sieve the Flour
3. When the egg’s white is beaten, like a meringue, stop them and add Egg’s Yok
4. Add Flour and mix it slowly
Filling Tiramisu
No Bahan-bahan Kuantitas Persiapan
1. Cheese Mascarpone Bulk 600 Gr -
2. White Sugar 80 Gr -
3. Egg White 120 Gr -
4. Egg Yok 80 Gr -
5. Gelatine Leaf 66’s 8 Gr -
6. Cream Whipped Natural 200 Gr -
Metode :
1. Mix Mascarpone and Egg Yok
2. Make a Meringue with the Egg White and Sugar
3. Whipped the Cream
4. Make the Gelatine soft
5. Add the Gelatine in the Mascarpone filling, fold in the Meringue and after Whipped
Cream Fill up one layer, put Lady Finger on Top (already soak with Coffee Syrup), then
Mascarpone filling again
6. Do this for 3 layer of Biscuit and Cream, finish by the Cream
7. Keep in the fridge overnight
8. Cut the sign you want and covered by the Cocoa Powder
