Now I will group you into four groups . Each group


will arrange the scramble word in the envelope that
I give you ,if you're done arrange the word select
one representative to explain it the class. I will give
you 2 minutes to finish the task. The 1st group who
can finish the task will earn 5 points and the second
group will earn 3 points.

Order taking is a process of recording orders


accurately, securing recorded data and delivering
the same.
The ten(10) basic steps of taking beverage order
What are the ten(10) basic steps of taking beverage by the guests
order by the guests?
1. Approach guests to take order

2. Right side/ presenting the menu

3. Suggestive selling

4. Waiting for the guest to take order

5. Taking order to women before men guest

6. Asking the order

7. Listing all down the orders by the guests

8. Verification of orders

9. Recognize by the other waiters/waitress

What are the order taking policies?
1. Preparation for taking beverage orders

* make sure you are well groomed and tidy.

*make sure you know the items on the


beverage list and knowledge about any happy
hours. 2. Approach the table

*stand on the right-hand side of the guest where


possible or at the end of the table.

1. Green level _ no noticeable behavior change

Customer:

1. Is talkative

2. Seems relaxed, comfortable, happy

3.Yellow level_ relaxed inhibitions and impaired


judgement.

Customer:

1. Becomes louder and more talkative

2. Becomes more quiet

3. Behave in an overly friendly way

4. Curses at the servers slow service

5. Complaints that drinks are getting weaker

6. Insists on singing with band.

3. Red level_ loss of motor coordination

1. Spills a drink

2. Sways when walking

3. Has slurred speech

4. Ask for a double

5. Is unable to pick up change

6. Annoys or argues with other customers


7. Becomes tearful or drowsy

8. Has difficulty focusing

9. Falls or stumbles.
