Recipe: Salmon Burger

Yield: 8 lb (24 burgers 6 oz each)

Ingredients: 7 lb Salmon (Raw, Ground)


2 ea. Red Bell Pepper (Small Diced)
2 ea. Green Bell Pepper (Small Diced)
6 oz Yellow Onion (Small Diced)
1 bunch Fresh Parsley (Minced)
¼ ea. Head Celery (Minced)
2 oz Garlic (Minced)
8 oz Egg Whites
4 tsp. Salt
4 tsp. Lemon Pepper
2 tbsp. Dill Weed
2 tbsp. Dried Basil

Directions:
1. Place ground salmon in a mixing.
2. Place along rest of ingredients and mix well.
3. Lightly grease a pan over medium-heat.
4. Using your hands, weight 6 oz of salmon mixture and round it into a burger.
5. Pan seared it and serve.

*For small salmon cakes dust with bread crumbs.
