HOW TO MAKE CATFISH CURRY

INGREDIENTS:
- 500 grams of catfish, cut into several pieces
- 400 ml thick coconut milk
- 2 turmeric leaves
- 2 lime leaves
- 2 stalks of lemongrass, bruise the white part
- 2 cm galangal, bruised
- 2 tomatoes, cut into wedges
- 1 purple egg plant, cut into slices
- 1 piece of sweet corn, cut into pieces
- 4 tablespoon coconut oil
- salt to taste
- sugar to taste
GROUND SPICES:
- 5 cloves of shallots
- 3 cloves of garlic
- 3 red chilies ( according to taste, adjust to the desired level of
spicines)
- 2 cm turmeric
- 2 cm ginger
- ½ tsp coriander Powder
- ½ tsp cumin powder

STEP BY STEP:
1. First, grind all the spice ingredients using a blender or pestle.
2. Heat coconut oil in a large frying pan. Saute ground spices along
with turmeric leaves, lime leaves, lemongrass and galangal until
fragrant and cooked.
3. Put the catfish pieces into the pan. Stir carefully so that the fish
doesn't break down.
4. Pour the thick coconut milk into the pan. Let the fish cook and the
coconut milk boils, stirring occasionally.
5. Once the fish is cooked, add the eggplant slices, sweet corn pieces
and tomato wedges. Stir gently so that all the ingredients are mixed
evenly.
6. Add enough salt and sugar according to your taste, stir well.
7. Let the curry boil and the ingredients are cooked perfectly. Make
sure all the ingredients are soft and the spices are absorbed.
8. Taste and adjust the taste if necessary. If it is right, turn off the
heat.
9. The catfish curry is ready to be served. serve warm with white rice.
