HOW TO MAKE ROTI JALA SPECIAL CURY

Material:
- 500 grams of wheat flour
- 1 egg
- 300 ml of air
- 1 tbsp salt
- 2 tablespoons vegetable oil

Special curry ingredients:


- 1/2 chicken, cut into small pieces
- 4 boiled eggs, peel the shells
- 3 potatoes, split into 4-6 pieces

Special curry spices:


- 2 tablespoons red chili powder
- 5 cloves of shallots, puree
- 5 cloves of garlic, crushed
- 4 cardamom grains
- 3 star anise
- 4 cloves
- 1 piece of cinnamon
- 1/2 tsp kaska
- 1 tbsp ground coriander
- 1/3 tsp ground cumin
- 1 tablespoon ground turmeric
- 2 bay leaves
- 3 lime leaves
- 1 lemongrass stalk
- 600 cc coconut milk from 1 coconut
- Salt to taste
- 2 tablespoons oil for frying
- 50 cc of air

How to make:
1. Mix flour, water, eggs, vegetable oil and salt. Beat with a mixer until smooth and strain.
2. Put the mixture into a bread mold container or use a mineral water bottle with two to three
holes in the lid.
3. Heat a medium-sized Teflon pan that has been greased with a little oil to start rolling the
dough until it's finished. Use low heat.
4. Serve with special curry and pickles

How to make special curry:


1. Saute the shallots, garlic, chili powder, turmeric, cumin and coriander until fragrant.
2. Add the chicken pieces, cardamom, star anise, cloves, cashews, cinnamon, lime leaves, bay
leaves and lemongrass.
3. Add a little water so it doesn't burn. Stir. Add coconut milk and salt, check the taste.
4. Add potatoes, cook until soft, then add eggs. Cook until the sauce thickens, stirring so that
the coconut milk doesn't break. Ready to be served with roti jala and pickles.
