The diagram illustrates how a home smokery works.
The process involves three main steps, initiating with blowing fresh air down to the underground and culminating in smoke rising to the ground to smoke the fish. The home smoker has three parts. The first part is an empty hole of the machine chamber with a lid on the ground. Fresh air is allowed to go underground by opening the lid. Fresh air then enters the second part of the chamber, which is very similar to the first part. In this section, the fire is started by adding logs through the top lid. When the fire burns, the heat from it travels through a narrow pipe leading to a box. This box is the third part of the process and is located at ground level. In the box are the fish that need to be cooked. The heat emitted from the second part of the chamber will cook the food.
