TOOLS AND EQUIPMENTS NEEDED
IN EGG PREPARATION
(PERFORM MISEN PLACE)
MISEN PLACE- it is a French term which means “set in
place” that is you have everything ready to cook and its place.

KICTHEN TOOLS- is a small hand held tool used for


food preparation.

KICTHEN EQUIPMENT- usually refer to the


larger items in our kitchen that handle the bulk of
the preparation and cooking processes

 A deep bowl that is particularly well suited for
mixing ingredients

MEASURING SPOON
 It is used to measure smaller amount of
liquid and dry ingredients

 A large spoon with slots or holes for draining
liquid from food.

 It is used to incorporate air to

CHALAZAE

These are the twisted


cordlike strands of the egg
white. They anchor the
yolk in the Centre of the
egg. Prominent chalazae
indicate high quality
This is the entrance of the latebra,
GERMINAL the channel leading to the center of
the yolk. The germinal disc is barely

the surface of the yolk

vitamin C, and many
minerals. Egg products are
particularly good for

1. Fresh eggs
Fresh eggs or shells eggs may be purchased individually, by
dozen or in trays of 36 pieces.
2. Frozen Eggs

- Are made of high-


quality fresh eggs.
- They come in the
form of whole
eggs with extra
yolks and whites.
Frozen eggs are
pasteurized and
must be thawed
before use.
3. Dried Eggs

• These are rarely


used. Their whites
are used for
preparing meringue.
• Dried eggs are used
primarily as
ingredients in food
industry. They are
not commonly sold
directly to
consumers.
Garnishing
Glazing

• Beaten whole egg


or yolk brushed
onto food items
before baking will
give it a gloss or
glazed finish.
Aerating
• Whipped egg
whites contain
tiny air bubbles.
When this mix is
added to other
ingredients it
makes the dishes
light and fluffy.
Soft Peak
Peaks are formed
but do not hold up.

Binding
• Eggs can be used to bind ingredients together as
they are coagulated when cooked.
Clarifying

• Beaten egg whites


are added to
remove impurities
and produce a
clear finish.
Coating

• Coating batters use


whole eggs and
breadcrumbs to
provide a coating or
protection for the food
item prior to cooking.
Enriching
• Whole eggs add flavour and nutritional value.
Emulsion
• Whipped egg yolks can
hold other ingredients
together that do not
normally mix, such as
oil and vinegar.
