HM Program 2
Menu Boards

HM Program 3
POS Terminal Keys

• Preset keys
• Price look-up (PLU) keys
• Function keys
• Settlement keys
• Modifier keys
• Numeric keys

HM Program 4
POS Terminal Keys

HM Program 5
Preset Keys

• Preset keys maintain the price, descriptor,

department, tax and inventory status for a
select group of menu items.

• Each preset key or screen icon is normally

associated with a department code and a
printer routing code.

HM Program 6
Price Look-Up (PLU) Keys

• Since terminals have a limited number of preset

keys, PLU keys are used to supplement
transaction entries.

• The user identifies a menu item by using a

unique reference code number (usually up to
five digits).

HM Program 7
Function Keys

While preset and PLU keys are used for order entry
purposes, function keys help the user to process
transactions.

Sample function keys include:

• clear and void (both used for error correction)
• discount (used for legitimate price alteration)

HM Program 8
Settlement Keys
Settlement keys enhance revenue accounting
controls by classifying transactions by payment
method at the time of settlement. Those methods
include:

HM Program 9
Modifier Keys

• Modifying orders (special requests): Modifier

keys allow servers to relay preparation
instructions to remote workstation printers
or monitors in F&B production departments.

• Modifier keys may also be used to alter menu

item prices.

HM Program 10
Operator Monitors and Customer Display Unit

• A POS terminal typically contains an operator

monitor and may also support a Customer
Display Unit.

• Customer display units can rest atop, inside,

or alongside the POS device. They permit a
guest to observe the operator’s entries.

HM Program 11
Touchscreen Terminals

• A touchscreen terminal displays data on areas of

the screen that are sensitive to touch.
• A touchscreen terminal often requires
significantly less counter space.
• Touchscreens simplify data entry and are often
selected over traditional screens and POS
keyboards.

HM Program 12
Self-Service Order Entry
• Some restaurants use touchscreen
terminals that allow customers to
place their orders directly.

HM Program 13
Handheld Terminals
• A handheld terminal is able to perform
most of the functions of a pre-check POS
terminal (like Micros POS terminals).
• Handheld units have low-frequency FM
radio transmitters and receivers or
simply work on Bluetooth wireless.
• Tablets incur lower fees for software
upgrades, system support and auxiliary
functionality.

Various Payment Methods

▪ Cash
▪ Debit Cards
▪ Credit Cards
▪ Gift Cards

HM Program 17

HM Program 21
Purpose of these Systems

• Monitor progress toward goals.

• Measure performance.
• Identify trends / patterns.
• Evaluate alternatives.
• Support decision-making.
• Assist in identification of corrective
action.

HM Program 22
Functions

• Enables managers to monitor/administer

the transactions/activities
• Provides control over business resources
• Produces timely/comprehensive reports
formatted to meet managers’ needs
• Eliminates unnecessary documents
• Streamlines procedures

HM Program 23
Duties of the Property Systems Manager
• Plan and control MIS activities.
• Select department systems managers.
• Manage multiprocessor environments
• Design/use back-up and security controls.
• Oversee local and wide area networks.
• Request system modifications and
upgrades.
• Document system changes.

HM Program 24
Converting Data into Information
• Data are converted into information through a
cycle of events identified as;
Input Processing Output
• During input, data are collected and organised
to simplify processing.
• During processing, data are manipulated or
arranged to generate meaningful output.
• The output, can be reported for immediate use
or saved for future reference.

HM Program 25
Types of Data

There are three distinct types of data:

• Alpha data consists of only letters, e.g., the
names of menu items, employees and hotel
guests.
• Numeric data consists of only numbers, e.g.,
menu prices, transaction amounts and
occupancy percentages.
• Alphanumeric data consists of both letters and
numbers, e.g., a hotel’s street address, a menu
item’s description and personnel records.

HM Program 26
Binary Coding
• Regardless of type, data must be translated into
binary code in order for the system to process it.

• Bit: smallest unit of electronic data (either 0 or 1)

• Byte: sequence of bits representing a single character

and a measurement of memory

HM Program 29
Customer Relationship Management
• Given guests’ transaction histories, marketing
and sales staff can better understand an
individual guest and sell additional hospitality

guest’s needs.

• Software that supports this level of

individualized marketing is called Customer
Relationship Management or CRM software.
