Ngy nay, surimi khng ch l sn phm truyn thng ch c Nht Bn m n ngy cng pht trin mnh m v vn ra nhiu quc gia ln trn khp cc chu lc u, Trong , quc gia sn xut surimi nhiu nht l M. Surimi v cc sn phm sn xut t surimi - surimi seafood - c ch ng vng chc nh ngy nay l v surimi c nhng c tnh rt ni bt nh l sn phm khng c mi tanh v kt dnh cao. Ngoi ra, surimi cn l sn phm c lng protein cao, lipit thp, khng c cholesterol nn c th d hp thu. Surimi cn l ngun thc phm giu m cho nhng ngi b bnh tiu ng, bo ph, nhng ngi d d ng vi mi tanh ca c. Vit Nam c mt s loi surimi l cc sn phm truyn thng nh gi c, ch c. Surimi khng c mi v v mu sc c trng, c kt dnh vng chc, l mt ch phm bn thnh phm, l mt nn protein, c s dng rng ri lm nhiu sn phm gc thy sn khc. Surimi c hm lng protein cao, lipid thp, khng c cholesterol v glucid, c th d hp th. Protein ca surimi c kh nng trn ln vi cc loi protit khc, nng cao cht lng ca cc loi tht khi trn ln vi tht b, tht heo hay tht g... c bit surimi c tnh cht to thnh khi do, mi v v mu sc trung ha, nn t cht nn surimi ngi ta c th ch bin ra cc sn phm c gi tr cao nh: tm, tht, s ip, cua, gh, xc xch. Cng nn nh rng, surimi c xem l sn phm gi tr gia tng ch khng n gin nh tm ng lnh, tm luc xut khu. Sn lng cung cp surimi trn th gii t 1989 1997 Ch thch: Alaska pollock (AP), Threadfin bream (TB), Southern blue whiting (SBW), Pacific whiting (PW), v mt vi loi khc (OT).
