American Style Omelet

Prep Time 10 min / Cook Time min I Yield Serving

Ingredients: 3 Eggs Pinch of salt. 1 teaspoon room temperature butter, plus teaspoon for finishing omelet teaspoon fresh chopped chives

Method of Preparation:

1. Heat a 10-inch non-stick aluminum pan over medium-high heat. Once pan is hot add butter and brush around surface of pan. 2. Pour eggs into center of pan and pull away the cooked eggs from the edges to the center to form large curd. Repeat until semi-solid mass begins to form lift pan and move around until the excess liquid pours off into pan. 3. Using your spatula move around the edge of the egg mixture to help shape into round and loosen edge. 4. Let omelet sit in pan for 10 seconds without touching. 5. Shake pan to loosen from pan. 6. Using your spatula, fold the omelet in 1/2. If you are adding a filling do so before you fold the omelet. 7. Slide omelet onto plate. 8. Coat with remaining butter and sprinkle with chives 9. Serve immediately.
