This study examined the relationship between food taste perception, stress levels, and energy and protein intake levels among inmates at a women's correctional facility in Martapura, Indonesia. The study found that 50% of respondents had less attractive perceptions of food taste and the majority had energy and protein intake deficits or levels below normal. Most respondents reported normal stress levels. Statistical analysis revealed relationships between food taste perception and stress levels with both energy and protein intake levels. The study recommends increasing the taste of food served to help inmates meet their energy and protein needs.

The result of Health and Justice Department study in Correctional Institution
showed that there was 40,9% problem prevalence associated with nutrition. The implementation of the right food service is one of the effort to reach nutrition fulfillment which is can maintain physical and mental health. The purpose of this study was to determine the relation between food taste perception and stress level with energy and protein intake level (study in Correctional Institution of Women Klas IIA in Martapura). This was an observational analytic research with cross sectional design. Total sample of this study was 44 of 426 people which is taken by purposive sampling. This research was using Rank Spearman Correlation to analyse the data with 95% confidence interval and α = 0,05. The result of this research showed that there was 50% respondent who had less attractive of food taste perception with the most energy intake level was deficit and less category with each percentage was 18,2%, while the most protein intake level was 29,5% in sufficient category. There was 72,7% respondent who had normal stress level with the most energy intake level was 27,3% less while the most protein intake level was 36,8% in normal category. The Rank Spearman correlation result showed that there were relation between food taste perception (p=0,003) and stress level (p=0,021) with energy intake level, and between food taste perception (p=0,013) and stress level (p=0,008) with protein intake level. Correctional Institution of Women Klas IIA in Martapura is suggested to increase the taste of food so that energy and protein intake level can be fulfilled through it.
