• Concept: Blue Iguana Tequila Bar presents a one of a kind experience stemming from the “sun and fun” idea of
relaxation by the pool.
• Guest Experience: The Blue Iguana Tequila Bar is the perfect opportunity to relax by the pool with a refreshing
cocktail. Guests find themselves outside sipping a refreshing frozen drink or frosty beer.

 Personnel
Bartender Personality
• Personnel working at the Blue Iguana Tequila Bar are hand
picked for their friendly and relaxed demeanor modeled
after the laidback disposition of the Caribbean islands.
Responsibilities
• The bartender should ensure that they have everything in
the bar 15 minutes prior to opening and don’t leaving the
bar for anything. All items offered on the menu & recipes
will be stored in the bar.
• Service to guests sitting at the bar as well as approaching
the bar.
• Fill bar wait staff orders for guests sitting nearby.
• Maintain and fulfill standard operating procedures of bar
as outlined by Guest Commerce team.
Bar Wait Staff Responsibilities
• After the guest sits and is comfortable the bar waiter shall
approach the guest and greet them, then advise them
about the chalkboard promotions as well as the daily
special.
• Bar Tray Service
Note: May not reflect all aspects of job.
Senior Bartender Basic Functions
• To provide quality beverage service to guests. Suggest and
promote drinks that will proportionally, increase revenue.
• To provide an effective control of all assigned bars. To
supervise the basic operations of the bar waiters and bar
stewards, as per their job descriptions.
• To supervise the basic operations of the bar/bars assigned
while working as a bartender, providing regular feedback
to management on operational challenges, e.g., shortages,
scheduling, etc.
• Ensure all promotions at Blue Iguana Tequila Bar are
followed up as per procedure to maximize revenue.
• To assist with management tasks as directed by the
Beverage Operations Manager.
• To fill in as acting Assistant Beverage Operations Manager
in case of emergency situations.
• To maintain integrity of branded bar spaces as outlined by
Guest Commerce team.

 Daily Specials
Chalkboard promotion:
• Chalkboards are changed daily as per set guidelines and BITB staff shall take note of all promotions with timings before starting their duties (pg.
19-20).
• Bartender should meet briefly with DJ prior to him taking stage to go over daily specials, which should be announced each day.
• BW are recommended they write daily special on their order pad for easy reference.
• The promotions should be explained to guests during the initial approach based on the timings of the promotion
Tray Drinks Offer:
• Bar waiters will carry 1 types of tiki glasses on the tray to promote the concept of filling up 16 oz souvenir glasses for a 12 oz price during the
rest of their cruise. As well as push the drink special of the day on the tray with appropriate branded tray sign (see below) depending on what
type of cocktail is the special each day.
• Bar waiters will carry unbranded tray signs used for drinks that are not branded to Red Frog Rum Bar/Blue Iguana Tequila Bar but are served on
Lido deck for deck parties or etc (see below). These are the only approved tray cards other than the branded cards to be used on Lido.

Changes to the competition

• Red’s Rum vs Blue’s Tequila Challenge will replace the Carnival Mixology Contest on ships that receive the branded pool bars.
• All operational elements of the competition are exactly the same
• Only rum and tequila can be used as spirits in this competition.

 Special Offers During Blue Iguana Mexican Fiesta
SHOT SKI:
• The shot ski can be served with 2, 3 or 4 shooters . Shots can be a straight hard liquor shot, or a mixed
shooters (e.g. kamikaze). Shots can be all of the same or a mixed selections. If the guests are of
different heights, it is then recommended by the bartender that all the guests need to stand to the
level of the shortest guest taking the shot. In addition, all those doing the shot have to take it at the
same time (help could be given to the guest by counting down so everybody has it at one time). The
shot ski should be displayed at the back bar during the Blue Iguana fiesta party. Please note that the
ski with 4 shot glasses is very long and caution needs to be observed when maneuvering it so the other
guests do not get injured.
• When charging guest, the bartender should apply the discount button “shot ski 2” or “shot ski 4”
depending on which the guest orders. The discount will give the guest a dollar off of each shot.
• Shot Skis can be sold at any time, though without discount except during the FIesta

LIGHT UP SHOT GLASS

Light up shot glass should be carried on the bar tray starting at 9pm during the fiesta along with the
blow fish.

Only during the party should the blow fish be sold for the price of $14,95. At any other time, it should be

• Ringing occasions:
1) while serving the beer tubes.

Bar Games:
Domino
when opening the bar, bartender should leave the domino pieces on top of the domino table. At the end of the day, bartender closing it should pick up the
pieces from the table, count it to make sure nothing is missing and if so a new set should be placed for the next day.
Beer Pong
Every time a soloist takes break, bell will be rung to get attention and the rules shall be explained. For beer pong (Prior to starting sample demo shall be shown by the
Bartender to participating guests) 3 ping pong balls per person shall be given, each participant will have 3 chances, the participant needs to bounce once on the bar counter
to put the ball into the bucket at the back counter, participant needs to stand & step behind the bar stool, same person shall not be given repeat chances to play for the
same session. The winner of the beer pong shall be given a Dos Equis draft 16 oz glass beer as compliments. The beer shall be rung on the promotion exec folio # 3967,
Name & cabin # of the guest shall be written on the receipt and kept separate inside the envelope.
