This module is crafted for the Grade 7 or Grade 8 students in Technology &
Livelihood Education (Exploratory) – Bread and Pastry Production

This is intended for those who cannot attend classes on line. This shall be answered
with the guidance of a teacher or a learned adult at home.

This is the first of a series of ____ modules which the learner has to go through for a
quarter.

INTRODUCTION
Dear student, being a young learner, you have the chance to explore to eight
technology areas from which you may choose for a future occupation. Bread and
Pastry Production is one of your options.

If you study Bread and Pastry Production, you will be trained ton using modern
baking techniques, equipment, tools and utensils and other baking appliances. It is
an entry point to the bread and pastry making industry. Only after years of working
experience will you be considered a professional Baker / Pastry Chef.

In Bread and Pastry Production, just like other areas of Technology, identifying
hazards and risks are used to make work easier, faster and more accurate.

As you take this Technology and Livelihood Education (TLE) Exploratory subject in
Bread and Pastry Production, it will help us to provide and maintain a safe working
environment in which employees are not exposed to hazards. This responsibility
includes providing information, instruction, training and supervision so that workers
are not exposed to hazards.

LEARNING OBJECTIVES
In this module, you will be able to identify and hazards and risks found in the
workplace.

You will learn best if you carefully read further and answer the self-check

If there are words which are new to you, please find their meaning in the glossary on
page 15.

If you need somebody to help you, you can ask your elder brother or sister or your

There are lots of things that may affect the health of a person, such as his
environment, his lifestyle, etc. There are many who are not aware that work is an
important determinant of health. It can influence health in a positive or in a negative
way. Are you comfortable at work? How safe is your workplace? Do you think that
you are giving all you have for your work but it seems that it never is enough? These
are just some of the questions that you need to ask in order to assess whether your
workplace is healthy or not. A place that is safe, healthy and work-conducive entails
more productivity. In fact, with a healthy workplace you will be doing more work with
less effort.
The average kitchen is filled with numerous hazards that may go unnoticed until an
accident happens. Why take the risk when you can do something about it? Learn to
spot the hazards so you can take steps to keep your family safer. Just as being
shown by the picture above.

HAZARD is a term used to describe something that has the potential to cause harm
or adverse effects to individuals, organizations property or equipment.
RISK is the chance or probability that a person will be harmed or experience an
adverse health effect caused by a hazard.

Types of Workplace Hazard


1. Safety hazards: Inadequate and insufficient machine guards, unsafe workplace
conditions, unsafe work practices.

2. Biological hazards: Caused by organisms such as viruses, bacteria, fungi and


parasites.

3. Chemical hazards: Solid, liquid, vapor or gaseous substances, dust, fume or


mist.

4. Ergonomic hazards: Anatomical, physiological, and psychological demands


on the worker, such as repetitive and forceful movements, vibration, extreme
temperatures,

and awkward postures arising from improper work methods and improperly designed
workstations, tools, and equipment.

5. Physical hazards: Noise, vibration, energy, weather, electricity, radiation and


pressure.

6. Psychological hazards: Those that are basically causing stress to a worker. This
kind of hazard troubles an individual very much to an extent that his general
wellbeing is affected.

Risk assessment. Risk assessment is the process where you:


 identify hazards;

 analyze or evaluate the risk associated with that hazard; and
 determine appropriate ways to eliminate or control the hazard.

Factors that influence the degree of risk include:


 how much a person is exposed to a hazardous thing or condition; and
 how the person is exposed (e.g., breathing in a vapor, skin contact), and how severe
are the effects under the conditions of exposure.

What is an adverse health effect?


 A general definition of adverse health effect is "any change in body function or the
structures of cells that can lead to disease or health problems".
