Ingredients
300ml of milk
450ml of cream/
crème fraiche
A handful of mint
leaves
4 egg yolks
In a saucepan gently heat the milk, cream and mint until almost
boiling then we beat the egg and sugar. Then we poured the
milk and cream through a strainer to take out the mint leaves.
We then poured the milk and cream mixture into the egg and
sugar. Then we moved it back into the saucepan. Then we heat-
ed it up and stirred until it started to thicken. While it was
heating up we chopped up the chocolate. When it had thick-
ened we put in the chocolate and stirred it. When it cools down
you put it into the ice cream machine. Once it is cool enough
you can enjoy.
