CHAPTER IV

TECHNICAL STUDY

A large part of choosing resources has to do with technical study. It

recognizes the technical of the proposed project. The purpose of this study is to

supply necessary information or data in the business. It imposes the details of how

will you deliver a product and services. Business commences to begin its operation

by purchasing store supplies, store utensils, and its equipment.

The criteria in purchasing kitchen equipment should have its duty that are

expected to perform or display, step saving, and traffic flow and element of proper

ventilation. The goal is to discuss on how services and processes done, the store

location, the store layout, and also consider the particular and structure of the store,

the tools and equipment needed in the production.

Raw Materials

Ingredients for the nutritious and delicious product will be distributed by

different suppliers along Taytay, Rizal.

All the ingredients that the proponents needed are: potato, water, pepper,

salt, evaporated milk, cheese, dairy cream, oil, bread crumbs, eggs and ice.

As notice, the raw materials are collected only in Taytay, Rizal to guarantee

accessibility and availability of each goods as needed. Raw materials are estimated

to last for at least a week.

Ingredients for Potato Lollipop

 3 medium Potatoes Boiled, cooled, mashed

 1/2 tsp salt or as per taste

 1/2 tsp pepper or as per taste

 1 cup of Nestle Cream

 1/2 cup of Evaporada

 1/4 slice of Daricreme

 Cheese

 1/2 cups of Bread Crumbs for coating

 1 Egg

 1 cup oil for deep frying/ shallow frying

Directions:

1. Take mashed potatoes in a mixing bowl. Add salt, pepper, nestle cream,

daricreme and evaporada. Mix them well. (While adding some ingredients, make

sure to taste it before you put something again).

2. Keep in refrigerator to set for sometime. This helps in binding properly.

3. Then greese your palms and take out small balls from the mixture.

4. Put some cheese inside it and roll it to give round shape or any other shape of

your choice.

5. Scramble the egg into a bowl.

6. Dip the potato balls to the egg bowl and roll it on the breadcrumbs you prepared.

Repeat this for each ball and keep aside. (It should be twice of dipping to harden the

texture).

7. Deep fry or shallow fry them till it turns golden and crisp. Serve hot with any dip of

your choice.

Ingredients for Bechamel Sauce:

 2 cups milk

 6 tablespoons unsalted butter

 3 1/2 tablespoons all-purpose flour

Instructions:

1. Warm the milk: Warm the milk in a separate saucepan or in the microwave until

warm to the touch and set aside.

2. Melt the butter: Melt the butter in a small, heavy saucepan over medium heat, but

do not let it brown.

3. Add the flour: Add the flour and stir it quickly into the butter with a wooden spoon.

As you can see in the photo, the butter and flour will be a mixture that looks like wet

scrambled eggs at first.

4. Cook the roux: Cook and stir the flour-butter mixture about 5 to 8 minutes. The

butter and flour will dry out slightly and turn just a bit darker to a more golden color.

Do not let it brown or darken; we are creating a "blond" or golden roux, where the

flour has just been cooked.

5. Add a few tablespoons of warm milk: Pour in just a few tablespoons of the hot

milk, just enough to moisten the flour and butter mixture. Stir thoroughly to loosen up

the thick flour mixture.

6. Add the remaining milk and whisk: Now grab the whisk and gradually add the rest

of the milk to the loosened flour mixture while whisking constantly. Whisk vigorously

until smooth!

7. Cook until thickened: Cook, stirring constantly, until starting to bubble and thicken.

You will be left with a thick, warm, creamy mix of flour, butter, and milk.

Ingredients for Cheese Sauce:

 2 tablespoons butter

 2 tablespoons all-purpose flour

 1 cup milk

 7 slices cheese

 1/2 teaspoon salt

Directions:

1. Prep 10 m Cook 15 m Ready In 25 m In a medium saucepan over medium heat,

melt butter and stir in flour.

2. Pour in the milk and stir until the mixture thickens.

3. Stirring constantly, mix in cheese and salt.

4. Continue to cook and stir until cheese has melted and all ingredients are well

blended, about 15 minutes.

Ingredients for Barbecue Sauce:

 1 1/2 cups brown sugar

 1 1/2 cups ketchup

 1/2 cup vinegar

 1/2 cup water

 2 teaspoons salt

 1 1/2 teaspoons black pepper

Directions:

1. Whisk together all ingredients in a medium saucepan situated over medium heat.

2. Allow to come to a bubble and then reduce the heat to low.

3. Allow to simmer until thickened, about 10 minutes.

4. Serve immediately or allow to cool slightly and store in an airtight container in the

refrigerator for up to a week.
