1) OBJECTIVE: To identify procedures and policies for cleaning, sanitizing and


maintenance of machines, equipment and facilities.

2) CLEANING SOLUTIONS AND EQUIPMENTS:


a) Towels and Rags
i) White Towel - for drying equipments in production area
ii) Blue Green Towel - for drying bottles and caps
iii) Green Rag - for wiping tables inside production area
iv) Yellow Rag - for wiping machines inside production area
v) Pink Rag - for wiping floor and wheels inside production area
vi) Blue/White Towel - for wiping raw materials
vii) Blue Rag - for wiping storage racks, cabinets, bench inside storage
area
viii) Orange Rag - for wiping windows
b) Cleaning Solutions
i) Chlorine Solution - 1 Tablespoon chlorine for every 1 Litre water
ii) Dishwashing Solution - 1 Tablespoon dishwashing soap for every 500
Millilitre water
iii) Mop Bucket Solution - 3 Tablespoon chlorine for every mop bucket
(water until marked line only)
iv) Toilet Bowl Cleaner - Use as is
c) Cleaning Equipment
i) Green Mop with bucket - for floor of production area and storage area
ii) Green Flat Microfibre Mop - for floor and walls of comfort room
iii) Green Broom with Green Dustpan - for floor of production area and
storage area
iv) Brown Broom with Brown Dustpan - for outside floor
v) Spray Bottle Clear - for chlorine solution
vi) Squirt Bottle Brown top - for dishwashing solution

a) Grater
i) Disassemble all removable parts
ii) Unscrew cutting blade from backing plate (place screw in small green
plastic container to avoid misplacing)
iii) Wash all removable parts with sponge and dishwashing solution (see
part 2)
iv) Rinse well or until no soap residue is left
v) Brush clean grater machine of all dirt and debris using blue brush
vi) Wet under water yellow sponge and apply dishwashing solution and
squeeze excess water
vii) Scrub thoroughly grater machine with yellow sponge (see step vi)
viii) Wash sponge with water until no soap residue left and wipe grater
machine with washed sponge until no soap residue left on the
machine
ix) Spray grater machine with chlorine solution (see part 2) and wipe with
yellow rag
x) Assemble machine
b) Cheese Cutter
i) Disassemble all removable parts
ii) Wash all removable parts with sponge and dishwashing solution (see
part 2)
iii) Rinse well or until no soap residue is left
iv) Brush clean cheese cutter of all dirt and debris using blue brush
v) Wet under water yellow sponge and apply dishwashing solution and
squeeze excess water
vi) Scrub cheese cutter and attached wire thoroughly with yellow sponge
(see step v)
vii) Wash sponge with water until no soap residue left and wipe cheese
cutter with washed sponge until no soap residue left on the machine
viii) Spray cheese cutter with chlorine solution (see part 2) and wipe with
yellow rag

ix) Assemble machine


c) Planetary Mixer
i) Disassemble all removable parts
ii) Wash mixing bowl and attachments under sink with dishwashing
solution (see part 2) and rinse until no soap residue left
iii) Spray mixer with chlorine solution (see part 2) and wipe with yellow
rag
iv) Assemble machine
d) Bottle Sterilizer
i) Disassemble all removable parts
ii) Wipe dry with white rag
e) Weighing Scale
i) Disassemble all removable parts
ii) Spray with chlorine solution (see part 2) and wipe with yellow rag
iii) Assemble all parts

4) HOW TO CLEAN EQUIPMENTS


a) Utensils (spatula, knife, funnel)
i) Wash with sponge and dishwashing soap (see part 2)
ii) Rinse until no soap residue left
iii) Dry with white towel
iv) Place inside plastic container when not in use
b) Mixing Bowls, Food Containers
i) Wash with sponge and dishwashing soap (see part 2)
ii) Rinse until no soap residue left
iii) Dry with white towel

i) Tables, Push Cart


(1) Spray with chlorine solution (see part 2)
(2) Wipe with green rag
(3) Spray pink rag with chlorine solution (see part 2) and wipe
caster wheel of push cart and tables
ii) Dishwashing Sink
(1) Spray with chlorine solution (see part 2)
(2) Wipe with green rag
iii) Floor
(1) Sweep entire floor (under table, between wall and floor) using
green broom and pick up dirt and debris with dustpan
(2) Mop entire floor (under table, between wall and floor) using
green mop and mop bucket w/ solution (see part 2)
b) Storage Area
i) Storage Racks and Cabinets
(1) Remove all items on storage racks or inside cabinets
(2) Spray with chlorine solution (see part 2)
(3) Wipe with blue rag
ii) Hand Washing Sink
(1) Spray with chlorine solution (see part 2)
(2) Wipe with green rag
iii) Floor
(1) Sweep entire floor (under table, between wall and floor) using
green broom and pick up dirt and debris with dustpan
(2) Mop entire floor (under table, between wall and floor) using
green mop and mop bucket w/ solution (see part 2)

iv) Bench
(1) Spray with chlorine solution (see part 2)
(2) Wipe with blue rag

v) Windows
(1) Spray with chlorine solution (see part 2)
(2) Wipe with orange rag
c) Outside Area
i) Sweep floor with brown broom and pick up dirt and debris with brown
dustpan
ii) Place dirt and debris on trash bin outside
d) Comfort Room
i) Toilet Bowl
(1) Place toilet bowl cleaner on the inside perimeter of toilet bowl
(2) Scrub using blue/white toilet scrubber
ii) Floor
(1) Spray floor with chlorine solution and wipe with green flat
microfiber mop
iii) Walls
(1) Spray walls with chlorine solution and wipe with green flat
microfiber mop
