Chapter 1

1.0 Introduction

Being a common source of discomfort, acid reflux becomes one of the few problems
that affect people of all ages, sometimes for unknown reasons. Often, it is due to a bad
lifestyle factor, but it can also be due to causes that cannot always be prevented. the
sudden pain in the chest and flow of stomach acid into the esophagus makes people
with acid reflux uncomfortable. Heartburn is usually described as pain in the chest.
Acid reflux is the actual physical flow of stomach acid back into the esophagus. This is
what causes one to feel heartburn. According to kremil-s.com.ph GERD is Heartburn
and Acid Reflux that occur regularly; usually at least twice a week, or in some cases,
even as little as once a week. Heartburn and acid regurgitation are often considered
the typical symptoms of GERD and an official diagnosis of GERD may be made when
these are present.
A researchers main goal is to make something innovative and helpful that can be
useful in the long run. We aim to make a product that is effective yet budget-friendly and
accessible that can be an alternative to medicine. Chia fruit jello contains Chia seeds,
Kris Gunnars from HealthLine.ph explains that chia seeds are rich in fiber, protein,
omega-3 fatty acids, antioxidants, and micronutrients the key nutrients for a healthy
stomach. They may aid weight loss and help reduce inflammation, blood cholesterol,
and triglycerides and jello; MaryAnn De Pietro, CRT indicates in her study that has
been Medically reviewed by Deborah Weatherspoon, Ph.D. R.N. CRNA jello or also
known as gelatin contains glutamic acid, a substance that may help promote a healthy
mucosal lining in the stomach. This could help with digestion. It may also help digestion
by stimulating the production of gastric juices. Gelatin also binds to water, which might
help food move through the digestive system. Lastly, apple juice as its flavor is said to
be “a good source of calcium, magnesium, and potassium. It's thought that these
alkalizing minerals may help relieve symptoms of acid reflux. Acid reflux occurs when

The researchers claim that the study can be beneficial to the following:

People who suffer from acid reflux - As a researcher, our main goal is to provide an
alternative remedy that can be easily accessible for those persons who suffer from acid
reflux so that they don‟t need to buy expensive medicines just to relieve their pain.

Future researcher - this study can serve as related literature for future researchers,
and which can further enhance the imperfection and flaws, and also to strengthen the
topic.

Food enthusiast – chia fruit jello is not just an alternative natural remedy for acid
reflux It can also be an alternative remedy for many discomforts and for food
enthusiasts it‟s a nice addition to their everyday food routine that they can enjoy while
eating. It‟s not just a portion of delicious food but also a power food.

1.5 Scope and Delimination

We the researchers would only want to focus on how chia fruit jello be a remedy
for having acid reflux. Our Lady of Fatima students will be covered as a part of the
respondents. The respondents that needed for conducting this study is 5 (five)
respondents.

1.6 Definition of Terms

Acid reflux is the actual physical flow of stomach acid back into the esophagus.

Gastroesophageal reflux disease, or GERD, is a digestive disorder that affects the


lower esophageal sphincter (LES), the ring of muscle between the esophagus and
stomach. Many people, including pregnant women, suffer from heartburn or acid
indigestion caused by GERD

Chia seeds are the edible seeds of Salvia hispanica, a flowering plant in the mint
family native to Central America, or of the related Salvia columbariae of the
southwestern United States and Mexico. Chia seeds are oval and gray with black and
white spots, having a diameter around 1 millimetre.

Gastric acid, gastric juice, or stomach acid, is a digestive fluid formed in


the stomach and is composed of hydrochloric acid (HCl), potassium chloride (KCl), and
sodium chloride (NaCl).

Food enthusiasts weigh in on the term "foodie". There are numerous terms that could
be used to describe a person who is passionate about food and cooking. Like
"food lover" or "gourmand" or "cuisine connoisseur" or even "food nerd."

Innovation in its modern meaning is "a new idea, creative thoughts, new imaginations
in form of device or method". Innovation is often also viewed as the application of better
solutions that meet new requirements, unarticulated needs, or existing market needs.

Glutamic acid (symbol Glu or E) is an α-amino acid that is used by almost all living
beings in the biosynthesis of proteins. It is non-essential in humans, meaning the body
can synthesize it. It is also an excitatory neurotransmitter, in fact the most abundant
one, in the vertebrate nervous system.

2.0 REVIEW OF RELATED LITERATURE

Considering the lack of studies about the relationship of chia seeds in facilitating acid
reflux we would want to focus on the key nutrients of chia seeds that combats GERD or
also known as acid reflux.

2.1 Chia Seeds

As stated by the Department of Foods and Nutrition, Purdue University, West Lafayette,
IN 47907 Chia (Salvia sp) seeds were investigated as a source of natural lipid
antioxidants. Methanolic and aqueous extracts of defatted chia seeds possessed potent
antioxidant activity. Analysis of 2 batches of chia-seed oils demonstrated a marked
difference in the fatty acid composition of the oils. In both batches, the oils had high
concentrations of polyunsaturated fatty acids. Chia seed is a potential source of
antioxidants with the presence of chlorogenic acid, caffeic acid, myricetin, quercetin,
and kaempferol which are believed to have cardiac, hepatic protective effects, anti-
aging, and anti-carcinogenic characteristics. It is also a great source of dietary fiber
which is beneficial for the digestive system and controlling diabetes mellitus with a
higher concentration of beneficial unsaturated fatty acids, gluten-free protein, vitamin,
minerals, and phenolic compounds. Therapeutic effects of chia in the control of
diabetes, dyslipidemia, hypertension, as anti-inflammatory, antioxidant, anti-blood
clotting, laxative, antidepressant, antianxiety, analgesic, vision, and immune improver is
scientifically established.
These are the nutrients that were proven by medical researchers about chia seeds.
Researchers in a 2016 study evaluated the effect of antioxidant vitamins on
gastroesophageal reflux disease (GERD), Barrett‟s esophagus, and esophageal tumors.
GERD is an advanced form of acid reflux. Results showed that consuming vitamins A,
C, and E through fruits, vegetables, and vitamin supplements might help prevent GERD
and its complications. Study participants who consumed more fruits and vegetables
experienced fewer symptoms of acid reflux in line with this chia seeds is a good source
of antioxidants and healthy fats that can overturn the effects and symptoms of acid

2.2 Acid Reflux

When you‟re looking for an acid reflux relief, changing your eating habits is a turning
point. The right foods though, because the wrong ones can make it worse. A portion of
really good food to take note of is chia seeds because they contain inflammation-
fighting omega-3 fats, along with many other valuable nutrients. Chia seeds expand
when soaked in liquid, which creates a thick and creamy pudding that tastes indulgent,

unless you have a tremendous amount of acid.

2.3 Apple Juice

Not having any food in your stomach means that the only thing in there is gastric juice,
which is primarily made up of stomach acid and other digestive enzymes. Eating an
apple (or any food for that matter) "bulks up" the stomach contents making them less

liquid. Solid contents are not as easily regurgitated back into the esophagus. Also,
eating a raw apple requires more chewing than other foods. Chewing stimulates the
glands in your mouth to release saliva, which naturally reduces the acidity of stomach
contents when it is swallowed.

Acid reflux occurs when stomach acid rises into the esophagus. Some say that eating

varieties.

2.4 Jello

Gelatin is basically cooked collagen. Collagen exists in the bones, hides and connective
tissues of many animals, as well as humans. Gelatin also contains 18 amino acids.
Many of these amino acids are essential, meaning they cants be produced by our
bodies and must be acquired as part of our diet

2.5 Chia Fruit Jello Making

Ingredients
4 cups of good quality, unsweetened apple juce
1 and a half – 2 tablespoons gelatin – 2 tablespoons gives a firm set
1 and a half tablespoons of black or white chia seeds
Method

Put the chia seeds into 2 cups of fruit juice, stir occasionally to prevent them sticking
together.
Heat the remaining two cups of the juice on the stove and bring to a boil.
Pour into a medium size bowl and gradually add the gelatin, stirring for one minute until
the gelatin is thoroughly dissolved.
Add the rest of the juice/chia seed mix. Stir occasionally until the chia seeds stay evenly
dispersed through the fruit juice. Chill until set – allow at least 1 hour

3.0 RESEARCH METHODOLOGY
Research methods are specific procedures for collecting and analyzing data.
Developing your research methods is an integral part of your research to be able to
come up with a strong and reliable outcome.

3.1 Research Design


The researchers used descriptive qualitative method to gain a more in-depth
understanding of the topic and to understand the natural settings of our research.

3.2 Source of Data


The subjects of this research were the students of Our Lady of Fatima University
where the researchers decided to case the grade 11 and grade 12 students to be its
respondents. The goal of this study is to test the effectivity of chia fruit jello among
grade 11 and grade 12 students who suffer from acid reflux.

3.2.1 Sampling Technique


Simple random sampling was utilized in this research, in this case, each individual is
chosen entirely by chance and each member of the population has an equal and fair
chance or probability of being selected. One way of obtaining a random sample is to
give each individual in a population a number, and then use a table of random numbers
to which individuals to include.

3.3 Data Gathering


The study used primary and secondary data collection procedures. Primary data were
collected through a series of survey questionnaires that will be answered by the
participants. The researchers conducted an intake survey. The survey will last for 1
week to monitor the changes in the participant's acid reflux. Once a day the participants
will eat the chia fruit jello and will record the changes that they can feel.

data will come from other researches and articles, secondary data that has been
collected in this study will be used to back up and strengthen the participant's testimony
about the product.

3.4 Data Analysis
The data collected will undergo Content and narrative analysis to analyze the data. The
researchers will be categorizing verbal or behavioral data to classify, summarize and
tabulate the data. reformulation of stories presented by respondents will be also used
taking into account the context of each case and the different experiences of each
respondent. In other words, narrative analysis is the revision of primary qualitative data
by the researcher. It‟s the best fit because it will analyze the responses to tests or
questionnaires to improve measurement accuracy and reliability.

3.5 Research Instrument

The researchers used their own-made questionnaire and adapted questionnaire to


gather records on The Effectiveness of Chia Fruit Jello to ease acid reflux. The
questionnaires used will be a mix of multiple choice and matrix type of questionnaires.

The questionnaire would test the students on their experience while using the chia fruit
jello.

4.0 FINDINGS

The purpose of this study is to verify the health benefits of chis fruit jello in terms of
managing acid reflux and to know whether it is effective or not.

4.1 Demographic analysis


Respondents demographic (n=5) indicate that the participants were all females who
suffers from acid reflux or any symptoms of acid reflux. Ranges from 17 to 18, with the
current weight between 35 kg to 48 kg and height that ranges between 4‟4 to 5‟4.

Respondent 1.3.4 and 5 stated that they don‟t experience any discomfort while
consuming Chia fruit jello while respondent 2 says that she experienced discomfort
such as bodily reaction due to abrupt digestion while consuming the product

product has chia seeds and it is high in fiber and it is a good antioxidant.

5.0 DISCUSSION AND CONCLUSIONS

The purpose of this study is to verify the health benefits of chia fruit jello on acid reflux
and to know if it is an effective remedy to ease acid reflux. Acid reflux is one of the most
common gastrointestinal that most people experience.

5.1 Summary of results

5.1.1 What are the causes for having acid reflux?

Eating large meals or lying down right after the meal can trigger heartburn or other
symptoms of acid reflux disease, such as a dry cough or trouble swallowing. When
you swallow, a circular band of muscle around the bottom of your esophagus (lower
esophageal sphincter) relaxes to allow food and liquid to flow into your stomach. Then
the sphincter closes again. If the sphincter relaxes abnormally or weakens, stomach
acid can flow back up into your esophagus. This constant backwash of acid irritates the
lining of your esophagus, often causing it to become inflamed.

5.1.2 What are the properties of chia fruit jello that relieve acid reflux?

Food choices can affect your acid reflux symptoms. Due to the impact of fat on stomach
emptying, it is recommended that you limit your fat intake. With almost 60 percent of
calories from fat, chia seeds are high-far food and may increase your acid reflux. Also,
the fiber in the seeds form a get when combined with water, which may also affect
stomach emptying and increase risk of acid reflux.

The high dietary fibre content adds a boon for the people suffering from constipation or

rich in omega3, this combined effect helps in rendering proper hydration and lubrication
to our intestinal system and also helps in removing excess acid.

Due to its swelling properties, it occupies a good volume in our stomach, and the person
ends up in eating lesser potion of food and the person feels fuller for a long period
which ultimately aids in the goal of weight loss.

Rich source of vitamins and minerals: If the body lacks in vitamins and minerals, there is
a significant reduction in energy levels, due to which the person ends up eating more
carbohydrate –rich food in need of energy, which finally adds to the fat content of the
body.

Chia seeds are a rich source of „healthy‟ energy as it supplies a well good amount of
vitaminsB1,B3 and minerals such as magnesium, iron, phosphorus, potassium, zinc,
copper, etc.

According to the USDA (2001), brown (2003), and the institu Nacional de Alimentos
(2003), chia contains 6 times more calcium,11 times more phosphorus, and 4.6 times
more potassium than milk.

Generally, omega 3 fats help in maintaining metabolism and curbs unhealthy food
cravings. Our body can produce Eicosapentaenoic and docosahexaenoic acid
(EPA&DHA) from alpha-linoleic acid which, in turn, helps in weight loss.

Gluten free: Acid reflux can be caused due to gluten intolerance. Chia seed is a rich
source of protein and mineral offers ideal gluten-free ingredient that can be included in
your diet.

Omega 3 content: Acid reflux can cause inflammation of the lining of oesophagus
(oesophagitis). Chia seeds are well known for their anti-inflammatory properties due to
their high omega 3 fat content.

5.1.3 How can chia fruit jello ease acid reflux?

Pack with different nutritional values chia fruit jello is a good way in managing your acid
reflux witch its chia seeds that is full of fiber with apple juice that have alkalizing
minerals that may help relieve symptoms of acid reflux and jello that help in digestion by

5.1.4 What are the other benefits of eating chia fruit jello?

AS stated by other participants they experienced diarrhea that can be a good sign that
chia fruit jello can be good for someone who suffers from constipation. Because of the
antioxidant properties of chia seeds toxins from the body can be flushed out.

5.1.5 How effective is chia fruit jello?

If used daily chia fruit jello can be an effective way to manage acid reflux. The
respondents who uses chia fruit jello daily notice the changes in their acid reflux while
those who uses the chia fruit jello for just 2 days didn‟t see any much changes.

5.2 Conclusion

When you‟re looking for acid reflux relief, changing your diet is a starting point. The right
foods though, because the wrong ones can make it worse. A portion of really good food
to take note of is chia seeds because they contain inflammation-fighting omega-3 fats,
along with many other valuable nutrients. Chia seeds are equal parts versatile,
delicious, and nutritious, making them a stellar addition to a healthy diet. These tiny
black or white seeds from the Salvia hispanica plant provide a boost of nutritional value
in the form of fiber and omega-3 fatty acids.

One of the key factors that influence acid reflux is diet. The idea of using chia fruit jello
in managing acid reflux is not bad at all instead its's a good way that those who suffer
from acid reflux add chia fruit jello into their diet.

5.3 Recommendation

This study recommends the use of chia fruit jello and to add it into their diet. For future
researchers it would be nice if they will case a much bigger respondents to know if chia
fruit jello can be effective.

Besides, the learnings and understanding from the people who experience acid reflux
will make a difference in terms of how they will handle their acid reflux. this study is not
just for people who suffers from acid reflux but also for future researchers who wants to
determine the effectiveness of chia fruit jello.

5.4 Recommendation for future researcher

Given our findings, the researchers would like to recommend future researchers to find
a way how to make the product more appealing and to remove the unwanted smell that
the participants are complaining about. One of the problems that the past researcher
encounters is the scale or the extent of participants that they used because of that they
didn‟t get any justice in the effectiveness of chia fruit jello it would be a smart choice to
cater a much bigger and larger participant to be able to test how effective chia fruit jello.
For an in-depth analysis of the research the researchers also recommend the future
researchers to use a descriptive quantitative research design to freely manipulate all the
variables also the researchers recommend the use of cross-sectional surveys to collect
data from a sample of the target population at a given point in time in line with this
researchers can evaluate various variables at a particular time.

5.5 Recommendations for Future Practice

For future practice, the researchers hope the professionals try to reassess and further
improve the product to be effective as any over the counter medicine in the market and
to innovate the product not just as jello but in any other form of food or product that all
people can take without being worried if they can eat it or not because they don‟t like
the appearance, consistency, smell, or even the overall presentation of the product.

For the stakeholders, the researchers would like for future research and development to
be given support, also in the means of financial support.
