Yang di perhatikan pada saat table set-up,


Sebelum table set-up, muleton harus pasang terlebih dahulu, table cloth tidak boleh
terbalik dan kursi di pepetkan ke meja, lalu buat napkin folding taruh ditengah depan
tamu, set up cutleries sesuai dengan lebar kursi dan diberi jarak setengah ruas ibu jari dari
tepi meja, dimulai dari kanan ke kiri dari dissert fork sampai bnb plate, lalu dissert knife
dan fork, water goblet di pasang sejajar di atas dinner spoon. Setelah cutleries dipasang
lanjutkan dengan set-up manage, vas bunga ditaruh ditengah, salt& paper tda boleh
berdampingan dengan ashtray, dan untuk table number berhadapan dengan pintu masuk
restaurant, tarik kursi memandakan table sudah ready.

1. Opening the glass
2. Welcoming the guest “Good morning, sir/madam welcome to” Ganesha
Restaurant”
3. Seating the guest
4. Unfolding the napkin from right side (ladies first) “excuse me sir/madam”
5. Pouring ice water from right side (ladies first)
6. Introducing self and Explain menu “Excuse me sir/madam. My name is as a
waiter/ss. For lunch today. Here are our Menus and Bevarage list for today.
Please have a look. If you are ready to order, i’ll be very pleasure to take your
order”
7. Take the guest order, both for food and beverage. Maximize to do an upselling to
the guest so they order from starter until dessert also give some Special Cocktail.
“Would you like to have some cocktail sir? Our bartender is already prepared
you a special cocktail i it is Harvey Wall Banger made from. and it will very be
refreshing your day at all”.
8. Repeat all the guest order to make sure it is correct.
9. Serve beverage from right side of the guest properly, with coaster below.
10. Serve appatizer from right side according clockwise (“Excuse me, this is your
appetizer Lawar Kacang”)
11. Clear-Up Appetizer from right side unclockwise (“Excuse me sir/madam, have
you finish your Lawar Kacang, May I clear up?”)
12. Serve the soup from right side according clockwise (“Excuse me, this is your
Chiken meat ball Balinese style, please enjoy your soup”)
13. Clear-up soup from right side unclockwise (“Excuse me sir/madam, have you
finish your Chiken meat ball, May I clear up?”)
14. Serve the main course from right side according clockwise (“Excuse me, this is
your Chicken betutu with sambal matah Balinese style”)
15. Clear-up main course from right side unclockwise (“Excuse me sir/madam, have
you finish your Chicken betutu with sambal matah Balinese style, May I clear
up?”)
16. Crumbing down from left side unclockwise and put down the cutleries to the side.
17. Served dessert from right side according clockwise (“Excuse me, this is your
Pisangrai enjoy your Pisangrai”)
18. Clear-up dessert from right side unclockwise (“Excuse me sir/madam, have you
finish your Pisangrai, May I clear up?”) Ask for the impresion during luch and
“How was your food,Sir?. We hope you enjoy your lunch.
19. Take the sign for the bill and ask about the paying method. “Excuse me,If you
dont mind, may i have your sign for the bill? How would you like to pay your bill
with?
20. Farewell the guest “thank you for coming and i hope you can back here.

Adjusting cover merupakan prosedur mengganti peralatan makan tamu, dalam hal
cutleries yang sudah di set up sebelumnya dan disesuaikan dengan orderan tamu atau
pesanan tamu .
