El procés està format per tres reactors de sembra i un reactor de producció. Cada
reactor està connectat a un esterilitzador de les matèries primeres i un compressor
per aeració. Després de la fermentació la biomassa cel·lular es retira mitjançant
un filtre rotatori al buit. La solució resultant d’enzim es concentra mitjançant una
etapa d’ultrafiltració. La fermentació té una durada de 107 hores, en base als
models cinètics emprats.

The homofermentative group, which produce lactic acid as the sole product of the
fermentation of sugars, and the heterofermentative, which besides lactic acid also produce
ethanol, as well as CO2. The difference between the two is as a result of the absence of the
enzyme aldolase in the heterofermenters.
Aldolase is a key enzyme in the E-M-P pathway and spits hexose glucose into three-sugar
moieties. Homofermentative lactic acid bacteria convert the D-glyceraldehyde 3-phosphate to
lactic acid.
Heterofermentative lactic acid bacteria receive five-carbon xylulose 5 phosphate from the
Pentose pathway. The five carbon xylulose is split into glyceraldehyde 3-phosphate (3-
carbon), which leads to lactic acid, and the two carbon acetyl phosphate which leads to
ethanol.

Les properes quatre diapositives mostren el treball d’enginyeria metabòlica fet amb una
soca de Basfia succiniciproducens per tal de redistribuir el metabolisme i augmentar la
producció de succinat, element essencial per poder-lo portar a nivell de producció
industrial. Primer, s’analitza la distribució de fluxos en la xarxa metabòlica de la soca
salvatge. Segon, s’analitza la distribució de fluxos en la xarxa metabòlica d’una soca
modificada amb la deleció de dos gens, la lactat deshidrogenasa (ldhA) i la piruvat-format
liasa (plfD). Tercer i quart, es recullen les dades de producció de les diferents variants. Es
pot veure com la primera modificació amb només la piruvat-format liasa (plfD) redueix la
producció d’acetat, però augmenta la de lactat. Quan s’afegeix la deleció de la lactat
deshidrogenasa (ldhA), també s’aconsegueix reduir la producció de lactat i s’augmenta
notablement el flux cap a succinat

Amino acids are the basic constituents of cellular proteins, as well as important
nutrients for all living cells. Their importance is closely related to their nutritional
value, in particular for those amino acids which are essential for man and animals
(lysine, threonine, methionine, tryptophan, phenylalanine, valine, leucine,
isoleucine, and, to some extent, arginine and histidine). Amino acids are used for a
variety of purposes, depending on their taste, nutritional value, other physiological
activities, and chemical properties. Besides their application in human nutrition
(flavour enhancers, sweeteners), they are used as feed supplements (animal
nutrition), as well as for cosmetics, in the pharmaceutical industry (infusion
solutions, dietary food), and as building blocks for chemical synthesis.
The use of amino acids in food consumes nearly 40% of total amino acid
production. Major products used in the food industry are L-glutamate (monosodium
glutamate, MSG), L-aspartate, L-phenylalanine, glycine, and L-cysteine. These
amino acids are produced by a variety of companies in East Asia, the USA, and
Europe.
