WAYS OF PRESERVATION
SALTING - is a method of
preserving food, that was more
common before modern
refrigeration. Salting preserves
food by drawing water out of the
food, preventing bacteria growing
and spoiling the food. The food is
surrounded in salt and left in a
cool dry place.
CANNING - the process of
placing foods in jars or cans and
heating properly to a specified
temperature, is a way to preserve
many different foods. The high
heat destroys microorganisms and
inactivates enzymes to preserve
the safety and quality of the food
DRYING - Food drying is a
method of food preservation in
which food is dried (dehydrated
or desiccated). Drying inhibits the
growth of bacteria, yeasts, and
mold through the removal of
water.
FREEZING - Refrigeration and
freezing are probably the most
popular forms of food
preservation in use today. In the
case of refrigeration, the idea is to
slow bacterial action to a crawl so
that it takes food much longer
(perhaps a week or two, rather
than half a day) to spoil.
