Apply food safety and sanitation

The objective of this lesson plan is to teach students the importance of food safety and sanitation in the food
industry. The lesson will cover topics such as proper handwashing techniques, food storage, cross-
contamination prevention, and cooking temperatures. The lesson will also include hands-on activities such as
preparing a dish while following the guidelines for safe food handling and cleaning and sanitizing kitchenware.
At the end of the lesson, students will be able to identify and explain the critical factors in maintaining food
safety and sanitation in a food establishment

Objectives & Outcomes

Identify the guidelines for safe food handling (remember)
Explain the importance of proper handwashing techniques in food safety (understand)
Implement the procedures for preventing cross-contamination during food preparation (apply)
Analyze the factors contributing to foodborne illnesses (analyze)
Evaluate the proper storage and cooking temperatures for different types of food (evaluate)
Develop a system for cleaning and sanitizing kitchen tools and surfaces (create)

Suggestions

Exploring Food Safety

Initiate a class discussion about the importance of food safety and sanitation. Ask students why they think these
practices are critical in the food industry. Encourage them to think about the consequences of not following
proper food safety standards

The Basics of Hand Hygiene

Provide students with videos or graphics demonstrating proper handwashing techniques. Discuss the role of
hand hygiene in preventing the spread of harmful microorganisms and diseases

What's in your fridge?

Ask students to think about how they store food at home. Discuss the importance of correct food storage for
maintaining food quality and minimizing bacterial growth
Evaluating Cross-Contamination
Prepare a demonstration showing how cross-contamination happens in the kitchen during food preparation.
Discuss the significance of preventing cross-contamination to ensure food safety

Proper storage and cooking demonstration

Demonstrate the correct storage and cooking temperatures for various types of food. Show students how to use a
food thermometer correctly

Best practices for cleaning and sanitizing

Conduct a kitchen clean-up demonstration that covers the correct techniques for cleaning and sanitizing kitchen
utensils and surfaces

The Safe Food Handling Challenge

Set a practical task for the students to prepare a simple dish while carefully following all food safety guidelines
discussed, such as proper handwashing, avoiding cross-contamination, and using correct storage and cooking
temperatures

Sanitize it Right
Ask students to perform a cleaning and sanitizing simulation of a kitchen station. Assess them based on the
sanitizing methods they apply and their understanding of the importance of a clean and sanitized kitchen

Food safety inspection checklist development

Allow students to create a checklist encompassing all the important elements of food safety and sanitation they
have learnt. Encourage them to use the list when preparing meals at home

Analyzing Foodborne Illness Scenarios

Create fictional scenarios around foodborne illnesses. Ask the students to analyze the reasons behind the
incidents reflecting on the topics covered and suggest ways to prevent such occurrences

What changed in your kitchen?

Encourage students to reflect on their own kitchen practices after the lessons learned. Ask them to identify what
they would change and why, relating to the principles of food safety and sanitation they learnt

Letter to a Restaurant
Ask students to write a letter to a fictional restaurant where they spotted some food safety and hygiene problems
during their visit. Instruct them to politely point out the problems and advise on the correct practices

Food Safety Quiz

Begin the lesson by conducting a quick quiz on food safety and sanitation. Include questions related to the
importance of handwashing, proper food storage, and prevention of cross-contamination. These questions
should be designed to get students thinking about the topics they are about to learn

Think-Pair-Share Activity
In pairs, invite students to discuss any experiences they have had with foodborne illnesses, either personally or
someone they know. Following their conversations, host a class-wide discussion where students can share their
thoughts on how these illnesses might have been prevented
Culinary Experience Sharing
Have students share their experiences about cooking at home or in a professional setting. Ask if they have ever
thought about food safety when cooking before. This could lead to a class discussion introducing the importance
of food safety and sanitation

Hand Washing Techniques

Demonstrate proper handwashing techniques according to health codes. Explain the importance of each step.
After the demonstration, have students practice washing their hands to ensure they understand the process

Safe Food Storage Orders

Use pictures or real food items to demonstrate the correct order of kitchen storage. Highlight the risks of
incorrect food storage such as increased risk of foodborne diseases

Cross-contamination Prevention
Show and explain the difference between clean and contaminated areas in the kitchen, and how to avoid cross-
contamination during food preparation. Use real kitchen utensils and food items for a more interactive
experience

Preparing a Safe Meal

In groups, have students plan and prepare a simple meal, demonstrating safe food handling, correct cooking
temperatures and proper cleaning and sanitizing practices. Monitor and guide their activities, providing feedback
where necessary

Poster Creation"{
Instruct students to create posters highlighting the key aspects of food safety and sanitation, such as correct hand
washing, temperature control, prevention of cross-contamination, and safe storage

Food Safety Inspection

As an assignment, have students perform a 'food safety inspection' of their home kitchens. They should critically
assess the space in relation to what they have learned about food safety and sanitation, and note areas for
improvement

Food Safety Journal

Have students maintain a journal over a period of time recording their observations about food safety practices
in different settings. They could reflect on their own practices, those they observe in their homes, or in public
places like restaurants

Reflection on Skills Developed

Encourage students to reflect on the skills they have developed during the lesson. They could discuss how these
skills could be applied in real-life scenarios and how they have impacted their understanding of food safety and
sanitation

Scenarios Discussion
Present different scenarios related to food handling and preparation to the class. Ask students to reflect on what
they have learned and suggest what actions should be taken to ensure food safety in each scenario
