BREAD MAKING
Introduction : In the modern times, bakery product industry is playing a vital role in the field of food industry owing to its high production and providing opportunity of employment to a large sector of people. Also, baking industry comprises an important segment or industrial processing industry in the country. Now developments have been involved in the field of bakery product industry due to innovation of novel technicalities in continuous bread making plant. Yeast constitutes an essential ingredient in the preparation of bread, It acts as a ferment for the dough to produce carbon dioxide and alcohol. Carbohydrates like sugar are broken down into simple sugar molecules eventually raising the dough. Activeness of yeast is a determining factor for the quality of the bread. If the yeast is less active, there will be more sugar in the flour which will consequently result in dark colour of the bread. Uses and Applications : Bread is highly consumable item of food and is becoming most popular product over the globe. It serves as a substitute nourisher, for the body metabolism particularly more so when high protein flour is used as a base for its preparation. Bread is relished in many palatable ways, viz. a fried bread, sandwiches, bread crumbs, patties, bread bakeries etc. Overall bread provides nutritious breakfast and foot to a large numbers of households in cities, Town and even in villages of India. Market Survey Bread constitutes a profoundly consumable item whose demand is ever increasing. Besides, bakery industry is being highly encouraged by the Government and its anticipated expansion both in the rural and urban areas makes both its present and future scope very bright. Furthermore, the development of bakery industry in towns, villages and backward areas provides a stepping stone to give employment opportunities to a large number of people at different levels. As bread consumption is increasing everyday and this is being increasingly used for various feeding programmes for children, managed by voluntary agencies and the state department of health education, and tribe welfare, there is an ever wider scope for the expansion of bread industries. Process of Manufacture (as per Formulation No. 6) Yeast is mixed with water. This is then placed in a mixing bowl or mixer (No. 1) into which wheat flour is also added and the mixing is done for 40 minutes. The mixed dough is set aside for a period of two hours and is fermented. Fermentation should be carried out at a temperature of 80F. The dough may be covered to prevent evaporation of moisture and to control temperature. A pH of 6.5 at the start of fermentation is suitably good for good yeast growth. Then the fermented yeast is transferred to mixer (No. 2) into which all the remaining ingredients viz. sugar, salt, ghee, milk powder, etc. are added and mixing is done for about 40 minutes. It is then kept for 1 hour. The dough is now ready for dividing. The dividing is done as per the size of the loaf to be manufactured. The dividing dough pieces are rounded in the Rounder machine, moulded (kept in the moulding machine for second stage fermentation) and panned and subsequently kept for final processing. When' the dough attain a particular rising they are baked for 40-45 minutes at 420F in a baking oven. Baked bread is then cooled, sliced and wrapped.
