Avocados contain an enzyme called polyphenol oxidase.

INTRODUCTION

The main objective of this report is to deepen knowledge on


how to avoid oxidation in avocado. In such a way that it can
be understood and used as a valuable tool in the various
applications as determined by sciences.

This report was made with the objective of disclosing the


detailed facts of how to avoid oxidation in avocado and the
corresponding use of the practices that therefore require it to
avoid problems when preserving our fruit.

Finally thanks to the instructor Alejandra Osorio Mendoza for


allowing us to develop and expand this work, also for the
constant support of her knowledge that always incuases us.
OXIDATION IN AVOCADO

The rapid oxidation of avocados is a consequence of


exposure to oxygen in the air, as well as the presence of
phenolic compounds in the avocado itself.

HOW TO PRESERVE HALF AN AVOCADO?


If your recipe only calls for half an avocado, keep the
remaining half with the bone. This helps its conservation since
it leaves less surface exposed to oxidation. Wrap in plastic
wrap (ecological, if possible).

CONCLUSIONS

In my opinion, the most effective way to prevent avocado


oxidation according to my experiments in the kitchen since I
frequently work this fruit in my dishes is:
perform the combination of several tricks mentioned above
starting by leaving the seed inside the remaining fruit, then
proceed to cut an onion, make a base in a container and
deposit the avocado and firmly cover that it does not have
contact with the air through any hole and take to the
refrigerator. It is the most effective way to avoid oxidation in
this very palatable fruit in Colombian gastronomy.
RECOMMENDATIONS

There are many rumors about how to avoid oxidation in
avocado but many of them are myths that become simply an
expression since they do not generate an evident result in the
desired process.

All these previous methods are useful to avoid the oxidation of


food, but if we carry out the process of the onion bed and
deposit it in a perfectly covered container, putting our avocado
there and taking it to the fridge for cooling is the best method.
It consists in avoiding the most possible the contact of the air
with the fruit.
