Sesame Noodles

This kid-friendly noodle salad uses sesame tahini and toasted almond butter for rich nutty (but peanut-free!)
flavor. Add leftover chicken, pork or shrimp if you like, and serve it chilled or hot.
Ingredients: 
spaghettini
1 (8-ounce) package brown rice spaghetti or other thin pasta
1/4 cup reduced-sodium tamari soy sauce
2 tablespoons tahini sesame oil
2 tablespoons smooth almond butter lime juice
1 tablespoon brown rice vinegar garlic
ginger
1 tablespoon lemon juice cilantro
1 tablespoon toasted sesame oil vegan Worcestershire sauce
Hot sauce to taste (optional) crushed red pepper
1 cup shredded red cabbage
2 medium carrots, shredded carrots
scallions
3 green onions, sliced sesame seeds
1 tablespoon toasted sesame seeds
Method: 
Bring a large pot of salted water to a boil over high heat. Add pasta and cook until al dente, about 10 minutes.
Drain and set aside.

In a large bowl, whisk together tamari, tahini, almond butter, vinegar, lemon juice, toasted sesame oil and hot
sauce (if using). Add pasta, cabbage, carrots and green onions. Toss to coat noodles thoroughly with sauce.
Sprinkle with sesame seeds and serve.
