Method of Preparation:
‐ Marinate the shrimps with salt, pepper and garlic for three hours.
Bok Choy:
‐ Split and wash the bok choy, lay flat in a hotel pan and half and half mixture white soy sauce and water. Cover and
poach.
Stir Fry:
‐ Heat the oil and sesame oil in a wok. Working quickly on high heat stir fry the carrots, green pepper and cabbage.
When wilted toss in the garlic, ginger and scallions. Finish with the chopped cilantro and a splash of fish sauce.
Plate:
‐ Sauté the shrimps in vegetable oil.
‐ Mound the vegetables just behind center, arrange six shrimps around the front of the vegetables with the tail up.
‐ Lay one piece of the bok choy over the vegetable and garnish with the red radish julienne and the picked coriander.
‐ Pour the sesame soy glaze around the front of the dish and sprinkle the shrimps with sesame seeds.
‐ Serve the steamed rice in a separate dish.
Sesame‐Soy Glaze
‐ Dissolve the wasabi in the water.
‐ Mix in the miso, dark chili sauce , rice wine vinegar, soy sauce, hoisin sauce and chives. Keep warm.
