Foreword

GCC Standardization Organization (GSO) is a regional Organization which


consists of the National Standards Bodies of GCC member States. One of GSO
main functions is to issue Gulf Standards /Technical regulation through
specialized technical committees (TCs).

GSO through the technical program of committee TC No. 5: " Gulf Technical
Committee For Food & Agricultural standards " has updated the GSO Standard
No. 1310/2002 “Glucose Syrup”. The Draft Standard has been prepared by
(Kingdom of Bahrain)

This standard has been approved as Gulf (Standard / Technical Regulation) by

This standard is concerned with glucose syrup, used in food industries.

 Definitions

 Glucose syrup: A purified concentrated aqueous solution of nutritive saccharides


obtained from starch and/or inulin.

 Dextrose: An alternative name of glucose and it is often mean Corn Syrup which
contains glucose and dextrins.

 Dextrins: Dextrins are mixture of soluble compounds formed by partial breakdown
of starch by heat or acid or enzyme.

 Dextrose equivalent value (DE): is a term used to indicate the degree of hydrolysis
of starch into glucose syrup it is defined as a total reducing sugar content expressed
as dextrose and calculated as a % of sugar content as a dry solids and the more DE
number mean higher sugar content and less dextrins. Glucose syrup has a dextrose
equivalent content of not less than 20.0 % m/m (expressed as D-glucose on a dry
basis), and a total solids content of not less than 70.0 % m/m.

 Requirements
Glucose syrup shall meet the following requirements:

 It shall be viscous and odourless, with a characteristic sweet taste.

 It shall be clear, free from sediments, or any other extraneous matter, that you see
with the naked eye.

 It shall be colourless, or of a faint yellow colour.

 It shall be free from fermentation and mouldy growth.

 Raw materials used in its manufacture shall be conform to there related GSO
standards.

 Total solids shall not be less than 70% (mm).

 Dextrose equivalent shall not be less than 20% (m/m) calculated on a dry basis.

 Protein shall not exceed 0.1%, calculated on a dry basis.

 Sulphated ash shall not exceed 1% calculated on a dry basis.

 Sulphur dioxide in glucose syrup used in manufacturing confectionery shall not
exceed 400 ppm and it shall not exceed 40 ppm in glucose syrup used in other food
manufacturing.

 Sulpour Dioxie shall not more than 20 mg/Kg

 It shall not contain contaminating metallic elements exceeding the quantities
specified in the following:

Arsenic 1 ppm

Copper 5 ppm

Lead 2 ppm

 The product shll be free from low quality converted starch.

 Sampling
The following shall be met during sampling.

 The pump shown in Fig. 1 shall be used and it shall be clean and dry when used.

 Precaution shall be taken to protect the contamination of samples, sample


containers, and sampling instrument.

 The sample shall be placed in a clean glass container and shall be sealed air-tight
and marked with full details of sample, date of sampling, date of manufacturing,
name of manufacturer or other important information about consignment.

 Sample shall be stored in a manner that the conditions of storage do not unduly
affect the quality of the material.

 If the consignment consists of different batches of manufacture, the containers


belonging to the same batch shall be grouped together, and one container from
each batch shall be selected as a representative sample.

 Producer

- Place the ample in a clean and dry place, clean the lid of the container and the area
round with soap and water. Wipe the cleaned area and dry.

- Removed the lid and take out with a ladle the material to remove the top scum, if
any.

- Insert the pump with its piston locked in position on the container and very slowly
press the pump down to the extent of the upper one-third height of the container.
Hold the pump in this position of five minutes.

- Again very slowly press the pump down through the middle one-third height of
the container and hold the pump in that position for five minutes.

- Press the pump down again very slowly and when it touches the bottom of the
container, raise it a little so that it is just above the bottom of the container. Allow
the pump to remain in that position for five minutes (the pump will have been
filled in by this time).

- Take out the pump and wipe its outside surface so as to remove the glucose syrup
which may be adhering to it.

- Unlock the piston and work it upward movement, simultaneously collecting the
flowing out of the spout in a clean and dry container.

- Repeat the operation of drawing glucose syrup in the above manner, until a
quantity of about 2 kg of the sample is collected in the container.

- Thoroughly mix the sample and divide it into three equal parts, each part being not
less than 0.6 kg.

- Thoroughly place the three samples in clean and dry containers, and seal them air-
tight.

- Label each container with the information given in 5.3.

- One of the samples shall be sent to the laboratory and one to the vendor, and the
third shall be kept as a reference sample.

 Methods Of Test

 The tests shall be carried out according to what has been mentioned in the Gulf
standard in item (2.2)

 Tests

the test shall be carried out on the representative sample taken according to 5 to
determine its compliance with the requirements of this standard.

 Packing, Transportation And Storage


The following shall be met during packing, transportation and storage and without
prejudice to what have been mentioned in the Gulf standards in items (2.7) and
(2.8).

 Packing

It shall be packed in a clean, sound, suitable, dry and leakproof containers.

 Transportation

Transportation shall be carried out in such a way so as to protect containers from


mechanical damage and contamination.

 Storage

The packed product shall be stored in well-ventilated stores and far from sources
of heat, moisture and contamination.

 Labelling
Without prejudice to what has been mentioned in the Gulf standard in item (2.1),
the following specific provisions apply on each container:

 Product name

If the glucose syrup contains fructose above 5% it shall bear a description to


reflect this.

 Manufacturing date by month and year in non-coded manner.

 Batch number.

 Using purpose.

 Product classified according to Dextrose equivalent (DE).
