You’ll be answering those activity sheets


as we learn the different types of fillings
MSC UP and spreads for sandwiches. Then, after
INSERT STINGER that, we’ll be having our performance task
and make our very own sandwich.

MSC UP AND UNDER Before we start our new lesson, let’s review

our previous lesson on the different types of


bread used in making sandwiches. (PAUSE)

Again, bread is a baked food product made


of flour or meal that is moistened,
kneaded, and sometimes fermented. A major
food since prehistoric times, it has
been made in various forms using a variety
of ingredients and methods throughout
the world.

SFX : HMM/ THINKING On our previous session we discussed about


the different types of bread. Do you still
remember those?

SFX : CLAP Yeah, That’s right! We have yeast bread or


loaf bread, buns and rolls, flat bread, and
wraps.

Now I want you to identify the following


breads used in each sandwich. You can
choose from yeast bread or loaf bread, buns
and rolls, flat bread, and wraps.

Are you ready?

types of bread in making sandwiches, we can
now proceed with our goals for today’s
INSERT STINGER session.

It is to identify the different types of fillings


that can be used in making sandwiches.
8:10 - 8:15 MSC ON The filling is the heart of the sandwich. It is
BACKGROUND placed between or on top of bread. It
provides flavor and body to the sandwich.

There are so many fillings to choose from,


what is your favorite spread or sandwich
filling combination?

Hmmmm! Mine is tuna spread made with


SFX : YUMMY/ STOMACH tuna, cheese, and mayonnaise. Wow! That is
GRUMBLING so yummy! Thinking of it makes me hungry!

There are so many sandwich filling

There are egg and cheese, ham and egg,


bacon and egg, and the classic peanut butter
and jelly that we always hear from American
sitcoms.
SFX : HMMM
Have you tried that?
Me too. I am wondering how does it taste!

But given with those filling combinations,


how do we differentiate them?
SFX : THINKING SOUND
Thinking sound.
8:15 - 8:17 MSC UP AND UNDER There are two types of filings: the dry
fillings and moist fillings.

Dry fillings refer to ingredients such as


sliced or cooked meat, poultry, and cheese.

Moist feelings refer to ingredients mixed


with salad dressing or mayonnaise.

Take note: Fillings may be used separately or


in combination

Some examples of dry fillings are meat and


INSERT STINGER poultry products.

8:17 - 8:19 MSC UP AND UNDER Beef products like sliced roast beef,
hamburger patties, steaks, and corned beef.

Pork products such as roasted pork, barbeque


pork, ham, and bacon.

Poultry products like turkey and chicken


breast.

Sausage products like salami, frankfurters,


bologna, liver wurst, luncheon meats, and
grilled sausages.
Meats used as fillings should be cooked,
covered, and refrigerated. Slice just before
the sandwich is to be prepared to avoid

drying out and lose flavor. Thinly sliced


meats are more tender and juicier than
INSERT STINGER thickly sliced.
These are also good source of protein.
8:19 - 8:20 MSC UP AND UNDER Aside from that we can also use fish and
shellfish as our dry filling.
Examples are tuna, sardines, salmon,
anchovies, and other fried fish.

Just remember, most seafood fillings are


highly perishable and should be left chilled
at all times.

Like meat, fish is also good source of protein


and filled with omega-3 fatty acids and
vitamins such as D and B2 (riboflavin). Fish
is rich in calcium and phosphorus and a great
source of minerals, such as iron, zinc, iodine,
magnesium, and potassium.

8:20 - 8:21 MSC UP AND UNDER In addition to meat and fish product we also
consider cheese as a dry filling.

There are different types of cheese that can


be used in making sandwiches like cheddar,
swiss, provolone, cream cheese, processed,
and spread.

Take note that cheese dries out rapidly when


unwrapped and sliced, when slicing is done
ahead, the slices should remain covered until
ready to use.
Cheese is a great source of calcium, fat, and
protein.

8:21 - 8:22 MSC UP AND UNDER Those are the examples of dry filling now let
us move forward to moist fillings.

Examples are mayonnaise-based salad like,


tuna salad, egg salad, chicken and turkey
salad, and ham salad.

Spreads like butter and mayonnaise are used


to protect the bread from soaking up
moisture from the filling.

Of course, lettuce, tomato and onion are


indispensable in sandwich production, also,
any vegetable used in salads may also be
used in sandwiches.

Now that you are familiar with the two types


of sandwich fillings.

8:22 - 8:25 MSC ON We can now proceed with our performance
BACKGROUND task.

SFX : YEHEY/ CLAPPING We will be making Pizza Bread.

Are you all excited?


SFX : YEY That’s great! Yesterday I asked you to
prepare the following ingredients.
And what are those?
Oh right!

We have
12 slices of Pinoy Tasty Bread or any bread
that you have.

4-5 slices of cooked ham, cut in small cubes

1 tbsp. minced onion

1 bar of cheese

115 grams of Del Monte Sweet Style Pizza


Sauce (or 1 cup of tomato sauce)

Dash of dried basil

1 cup of pineapple tidbits

2 tbsp of garlic powder.

SFX : YES Are you all set?

SFX : TING That’s great! But remember!


You have to wash your hands and wear the
desired PPE in cooking such as apron,
hairnet, and gloves.

We have to this to prevent food


contamination so the food that we will make
INSERT STINGER is good for consumption.

MSC ON Now that you are ready! Let us proceed with


8:25 - 8:28 BACKGROUND the procedure. So listen carefully.
SFX : LASER

The first step in making the Pizza Bread, we


have to arrange the tasty bread slices on the
tray.

Are you done with our fist step?

After arranging them on the tray, second step


is to spread the pizza sauce over each bread
equally.

Once you’re done

We can now sprinkle the garlic powder and


basil on each bread. This can add extra flavor
on our pizza bread.

Are you done?


Great!

Then you can put the grated cheese over


each bread.

Once you’re done. The next thing to do is to


put the toppings such as onions, cubed ham,
and pineapple tidbits.
Make sure that they are equally distributed
on each bread. So it will be appealing and
appetizing.

Next, bake it in the oven for about 10-20


minutes or until cheese has melted.

Opps don’t worry you don’t have oven you


can your pizza bread a pan placed over low
heat.

But remember to keep an eye on your pizza


so it won’t get burnt.

And of course the most awaited part we can


now enjoy our pizza bread with our love
ones.

That was so easy right? You can do this


again with your family members, I am sure
that you will enjoy this activity together and
bond you with your family.
