SPICED VINEGAR

INTRODUCTION:

Spiced vinegar is a type of vinegar condiment from the Philippines. It


is infused with spices primarily red chili and garlic.
In Filipino households, this condiment is used on many assorted
dishes, mostly fried dishes like; lechon, lumpiang shanghai, chicharron, etc.

INGREDIENTS:
 1 liter of cane vinegar or sukang tuba
 250 grams of sugar
 1 cup of table salt
 1 tablespoon of black pepper
 100 grams of red chili
 1 head of garlic

 Knife ─ Mask

 Sterilized Bottle

Prepare the ingredients and materials that

Peel the skin off the garlic cloves. Crush


thoroughly and chop.

Wash the red chili. After washing, remove the pedicel of the
chili

Sterile the bottle.

Put the vinegar in the pot, bring to a boil.

Put the salt and sugar in vinegar, and continuously mix using the
wire whisk until the salt and sugar dissolve.

Put the red chili, crushed garlic, and ground pepper inside the bottle.

When the vinegar is


not too hot, pour it in
the bottle and tighten
the cap.

REFLECTION:

          In handling such food, it is important to first consider the cleanliness


of the utensils and ingredients. When processing it, decontamination is a

The best example of decontamination when handling this product is by
sterilizing the bottle. because it is the final process of the said product. The
product we concocted will sit there for a long time, and we don’t want it to
get spoiled.
          Spoilage of food starts when the ingredients and utensils are not
handled right. In addition, if the packaging is not airtight or vacuum sealed,
air will get in, causing the food to get contaminated and spoil, and it will end
up in the garbage bin.
