CHAPTER 1

BUSINESS CONCEPT

Introduction

Breakfast is believed to be the most important meal of the day. Spence (2017) states that

breakfast provides sustenance and energy (i.e., calories) for whatever activities lie ahead. In the

Philippines, part of the culture and morning routine of every Filipino family is eating breakfast

firsthand in the morning right after leaving the bed. Affirmatively, this factor drives every Filipino

to not skip breakfast at the very least before going to school or work, or leaving the house. In 2018,

Brown published an article in BBC News revealing a US study and the dramatic results of the

analyzed health data of 50,000 people over seven years. Researchers found those who made

breakfast the largest meal of the day were more likely to have lower body mass index (BMI) than

those who ate a large lunch or dinner. Hence, breakfast and the country’s existing culture make a

good mix for the development and upholding of everyone’s health.

With the good in the imposed difficulty of breaking the culture, the concept of the business

begins with the idea of increasing opportunities of access to foods usually served at a limited

period, in an unlimited time frame. While breakthrough and novel concepts in the market are

becoming conventional these days, the business aims to offer revolutionary food and excellent

service to people in light with these trends. Breakfast is not always available in the market

especially after morning. For people who happen to skip this particular meal, the business is a good

medium in serving breakfast food that is satisfactory, timeless, and affordable.

Discovery lies behind a quest. Almusal Avenue seeks to serve unlimited, quality, and

delicious breakfast food to every student, worker, professional, and family in its continuous pursuit

of not only profitability, but also shared complacency.

Name of the Business/ Nature of Business

From the word “almusal,” the Filipino word for breakfast derived the first word of the name

of the business. The word ‘avenue’ is added to the name to give a label to the location, meaning it

is the avenue of profitable and palatable breakfast food. It is also added for the purpose of novelty

and branding.

Almusal Avenue is a new business that serves breakfast food all-day every day, giving

people opportunities to availing food not always offered in the market full-time. Aside from the

assurance of quality service and delightful offerings, the business also aims to give benefit to

people who look for budget-friendly meals.

Like other cafes, Almusal Avenue embodies a serene spot where gastronomic delight and

consumer satisfaction is guaranteed. The cafe is installed with new and high technologies to

provide convenience to guests with the most they can get. First, the eatery is installed with Wi-Fi

that would enable guests to access the internet for free while inside the store premises. Appliances

like air conditioner for temperature stability, television for entertainment, kitchen supplies and

machineries for food preparation, and motion sensor devices in the main door and the bathroom

are also set up inside the cafe.

On the other hand, the store design features a classic vintage bricked-walls theme. This is

evident in the posters, flyers, and Facebook page of the business. The reason for this move from
the owners is the desire to embrace fulfilment despite minimalism and simplicity. This should

induce interest among customers to discover the cafe and the delightful food it offers. Since also

history lovers and artists are reliving the vintage vibe in their works, the design of the cafe makes

itself good for photography especially among millennials and teenagers.

Vision/ Mission Statement

Vision:

excellent service operations.

Mission:

rendering excellent service to satisfy customers each day every day from the locality and into the

world.

MARKET INFORMATION

A. Industry Background

Breakfast rolls were part of the Irish culture in the late 21st century, until it became

prominent and shining up to this day, in the international stage. The Journal (2020) published an

online article highlighting breakfast roll as part of the history of the breakfast sandwich.

Apparently, McDonalds’ decision to introduce an all-day breakfast meal (which is Egg

McMuffins) links to the entrance of the breakfast sandwich to industrialization, which unavoidably

is also linked between the Irish breakfast roll and the Celtic Tiger. Washington Post states that a

2011 report from Ireland attributed the popularity of the “jumbo breakfast roll” (a half baguette

stuffed with fried or grilled sausage, bacon rashers, blood pudding, a fried egg and ketchup) to the

proliferation of construction jobs during the country’s “Celtic Tiger” years. The Post, likewise,

tells its readers that the ubiquity of the sandwich led comedian Pat Shortt write a song about it and

was actually the top song for six weeks in Ireland, ditching Shakira’s “Hips Don’t Lie” off the

charts.

With the sandwich being immortalized in Shortt’s song and loved by truck drivers and

early-morning building workers, the Jumbo Breakfast Roll (JBR) finally takes its place in the

history of contemporary Ireland. Brian McDonald (2008) cited in his online article in Independent

how sociologist Dr. Perry Share of Sligo Institute of Technology has carried out a study of Jumbo

Breakfast Roll and its spot in Irish society. With his findings contained in ‘Belongings: Shaping

Identity in Modern Ireland’ published by the Institute of Public Administration, Dr. Share

concludes that the jumbo breakfast roll is “perhaps the ultimate symbol of our [Ireland]
contemporary Celtic Tigerland.” Proofs evident enough to verify this claim is the phenomenal

popularity of the sandwich as the food of choice for hundreds of thousands of Irish commuters,

workers, and students down to the marriage of the Irish conglomerate IAWS and the rocketing

development of forecourt convenience stores. The fastest growing type of convenience store in

Ireland, as further stated, is the petrol forecourt. The forecourt has increasingly become the hot

spot to start the day with most workers preferring to drive to work and inevitably driving through

traditional meal times.

Furthermore, Ireland was apparently not alone in its love affair with the JBR. Breakfast

Burrito was said to be its first cousin, which originated in western US and also features pork

products and eggs. Statistic reports confirmed that one-fifth of commuters in the US now eat

breakfast “on the go” at least three times a week. In 2006, 33 meals per person per annum were

consumed in the car—including eight breakfast—the highest level ever recorded in the US. Share

says that similar trends are operating in Ireland given the close links between US and Irish food

service companies. The history of the JBR back in Victorian England emerged when roadside

vendors would set up their stalls on the routes to factories, selling large soft rolls containing ham,

sausage or egg filling to the workers.

B. Market Information

Objectives of the Study:

The objectives of the market study are as follows:

1. Identify the respondents covered by the research.

2. Determine the sample size of the respondents/

3. Employ the sampling method to be used.

4. Gather and analyze the results of the survey and intervies.

5. Interpret and assess the results of the survey.

a. Customers

The target market of the business will be the residence of Barangay Habay II in Bacoor

City, Cavite. Since the business is located near a school and a mall, and is in front of a residential

area; the business shall cater students, teachers, workers, and civilians of any age at any time of

the day.

b. Competitors

The direct competitors include other bread roll and breakfast sandwich businesses, given

the similarity of the product offered by the business. The Pancake Breakfast Roll is an innovative

food rooted from the typically sold breakfast sandwich rolls, which contain sausages, bacons,

sauces, and other fillings. Direct competition may be evident due to these similarities and should

regard choices which serving size, price, and ingredients are more practical in comparative

situations among customers.

The scope of indirect competition, meanwhile, includes other breakfast businesses such as

bakeries and cafes. Since the product offers breakfast food, the customers can opt other foods of

the kind that may be found in other stores and may be cheaper or tastier.
C. Marketing Program

Promotion

Flyers

Flyers will be given to inquirers and passersby in and near the target location to promote

the products and services offered by the business. This should likewise attract possible customers

into availing the offerings of the business.

Posters

With a larger-scale image of the company’s logo, name, and address, posters will be

posted in front of the shop in a way that is easily noticeable and attractive to the eye of the

customers. These should also be reproduced for distribution and posting in public places such as

markets, establishments, and posts around Habay, Bacoor City, Cavite.

Facebook Page

Since people are now attached to the online world, the business is expanding its

accessibility through an online platform. The business’ Facebook page should provide

convenience to people since they can send direct messages and calls to the page for inquiries in

just few quick clicks. Aside from accessibility, the Facebook page should serve as an effective tool

to broadening the scope of potential customers not only in Barangay Habay I and II, but in the

neighboring towns at large. The name of the Facebook page is Almusal Avenue. This kind of

promotion should help attract more customers given the immediate dissemination of information

the page can do.

shows the service process of the business.

Step 2. Select your meal. Fall in line to the counter and pay your
expenses.

Step 3. Get your order number and find your desired seat.

Step 4. Relax while you wait for your order. Watch TV inside the
store or ask the crew how to connect to the free internet.

Step 5. Enjoy your meal upon serving.

Production Process Flow

Production process is explained below:

a. Acquiring the order of the customer is the first step for production. The order list will be

given to the operating chef in the kitchen.

b. Preparing the ingredients is next. Kitchen supplies are stocked inside the refrigerator for

preservation. Mixing the pancake batter should take time. In light with this, the chef should

already have a pre-mixed batter inside the food storage in order to save time and effort.

Marinating the bacon is important to improve flavor. The chef should also have a pre-

marinated bacon in the storage to speed up the production process.

c. Cooking is the most essential part of production. The pancake batter shall be cooked in a

non-stick pan. The bacon shall be fried with a cooking oil, same as with the type of hotdog

the customer wants. The ham shall also be put into the microwave oven.

d. Withdrawing all the food from the cooking equipment is next. If there is an order for

drinks, the chef and kitchen helper shall prepare the iced drink using the ingredients

according to desired flavor of the customer.

e. Plating the meal is also crucial to perk up the food presentation and ensure the trademark

of the product. The hotdog will be wrapped with bacon and ham. A huge slice of cheese

will be added. Then, it will be wrapped with the pancake and settled with a toothpick.

f. Serving the meal is the final part of production. The customer is given options to choose

one out of the three syrup flavors. Ketchup and mustard are already served in each table in

case the customer asks.
