Chicken and Cheese Quesadillas

Ingredients: 6 ounces skinless, boneless chicken breast 3/8 (1.27 ounces) packet of fajita seasoning 1 teaspoon vegetable oil cup green bell pepper cup red bell pepper 3/8 cup chopped onion 4 flour tortilla 3/8 (8 ounces) shredded cheddar cheese 1 teaspoon bacon bits 3/8 (8 ounces) shredded Monterey jack cheese

Method of Preparation: 1. Preheat the broiler grease a baking sheet. 2. Toss chicken with the fajita seasoning then spread onto baking sheet. Place under the broiler and cook until the chicken pieces are no longer pink in the center about 5 minutes. 3. Preheat oven to 350 degrees 4. Heat the oil in a large sauce pan over medium heat stir in the green peppers, red peppers, onion, and chicken. Cook and stir until the vegetables have softened about 10 minutes. 5. Layer half of each tortilla with the chicken and vegetable mixture the sprinkle with cheddar cheese, bacon bits, and Monterey jack cheese. Fold the tortillas in half, place onto a baking sheet. 6. Bake quesadilla in the preheated oven until the cheeses have melted about 10 minutes.
