I want to thank God for giving me strength to finish my on-the-job


training consisting of 300 hours thoughout our second semester, i want to
thank him for guiding me and giving strength everyday during my on-the-job
traing days.

To my family, who ‘s always been supporting me what ever the


things that I needed to be done. They are always there supporting and
encouraging me more to do my job better, especially my mother who cooks
food for me before i go to my OJT.

To the university, who’s bringing out the best in me. To the


university where im studying, the only university with free tuition fee.

First of all , I want to thank God for guiding and protecting me every
night when my duty is done. I want to thank him for all the blessings he gave
to me and to my family. He also give me strength to complete my 300 hours
in OJT.

To my family who always there when I need them thakyou also for
giving me my needs. They were always there supporting me and giving me
strength and courage everyday. Who make me inspire to do my best to my
ojt. Who makes me smile and happy even if im tired.

To my beloved university, who encourage us to give our best to fulfill


our requirements in college.and to train us in the industry. They gie us a
chance to bring out our skills and knowledge outside the university.

INTRODUCTION

On The Job Traning (OJT). This is a part of college curriculum, a


program where students going out of their Classroom andstarting to
experience the real world or their future field. When you’re on the Job
Training you’ll not only gaiing experience but also knowledge and lessons
about the field you’ll take, that you can also use on your future work. On The
Job Traing will also boost your confidence

Hospitality industry, as they say one of the most fast growing industry.
It belong the restaurants, airlines, hotels, cruise ships and any thing that
provides service. Hospitality industry has a big role on the industry, if your on
the restaurant, who will serve the foods for you? If your staying in hotel, who
make up your bed if it so dirty and messy? If you’re on a bar, who will
entertain and mix cocktail for you? If your on an airplaine, who will guide
and serve for you? If you want a fabulous event, who will plan and do it for
you? All of this are scope of Hospitality industry which provides services.

On the Job Training requires effort and seriousness in everything you


do because onece you try to make it fun, you’ll never learn, because you
treat OJT as something to have fun. We the people who belongs to the
Hospitality Industry should always work with a heart so that everything we
do will be having a positive wesult. So make it well and right. Work seriously
and be a good OJT.

EXECUTIVE SUMMARY
The narratives of this report that flows from On-Job-Training at PIER
AT CLAWDADDYS RESTAURANT come to present executive summary.

The first part of this narrative is all about the company data. Claw
Daddy's opened in September 2012 and is located in the heart of Lower
East Side. We have created a stunning restaurant on Orchard Street,
where you can enjoy our fabulous Louisiana Boil and Raw Bar in a bright,
contemporary restaurant. We also have a great bar area with an
extended selection of craft beer and cocktails. This narrative report also
includes the organizational chart, and the personnels who we worked
with.

I also have here the works and activities I’ve done everyday as part
of my daily tasks. It includes the process of my job and photo
documentation.

The On-Job-Training is done with the memorandum of Agreement


between Taguig city university and the PIER AT CLAWDADDYS
REASTAURANT. They manage to ensure trainees learn practical skills
needed for our future career along with the personal developmentearned
during the training. OJT is one of the enrolled subjects of BSHRM, 2 ND
YEAR STUDENTS OF TAGUIG CITY UNIVERSITY during 2 nd semester school
year 2016-2017

AT MORRAY’S NEW ORLEANSRESTAURANT come to present executive
summary.

Morray’s New Orleans Restaurant was owned by a american and has a
buisiness partner in philippines. When the owner was died, the filipino
buisiness partner of the owner was become a owner of new orleans. We

PIER AT CLAWDADDY’S

COMPANY BACKGROUND
Claw Daddy's opened in September 2012 and is located in the heart of Lower East Side. We
have created a stunning restaurant on Orchard Street, where you can enjoy our fabulous Louisiana
Boil and Raw Bar in a bright, contemporary restaurant. We also have a great bar area with an
extended selection of craft beer and cocktails.
Claws Open
Raymund has been promoting seafood dining through his different restaurants like The
Red Crab Alimango House in Newport Mall in Pasay City, which is the result of tweaking
an old
concept.
Newport City is the 25-hectare development by Megaworld, the same one that developed
the successfully thriving Eastwood City.
“This is the newest happening place in the metro. With the opening of the Skyway, all
roads will converge here,” Raymund says.
Raymund and his team decided to add Alimango House to The Red Crab’s name because
they wanted to come up with a totally Filipino version of Western casual seafood
restaurant such as Joe’s Crab Shack in San Francisco and Red Lobster, among others.
“The resto builds on what The Red Crab has established over the past 12 years: providing
diners with quality but affordable seafood dishes,” Raymund notes.
Just to prove how serious they are with their seafood, a special section on the menu was
devoted entirely to the sea’s bounty. There are five categories to choose from: Sinugba
(grilled), Pinausukan (steamed), Sinabawan (soup), Pinirito (fried), and Seafood in Curries
and Chilies.
Dining In The Citi
To thank their loyal diners, Raymund has partnered with Citibank in its Citi Dining
Privileges program.
The Citi Dining Privileges is a program that gives Citibank cardholders perks at select
dining places not only in the Philippines but all over Asia as well.
“The promo originated in Singapore. It was such a huge success that we replicated it in
other Asian countries. We started the promo here in July 2010 and we’ve been getting
favorable feedbacks,” enthuses Alma Gruenberg, VP for retail marketing, Citibank.
With Citibank’s Citi Dining Privileges program, deciding on where to dine out is as easy as
visiting their website (www.citiworldprivileges.com).
“We try to have representations from every price range category. So there are restos for
the mass market as well as the affluent cardholders. We also managed to cover
geographical locations. We have partner restos in Quezon City, Manila, Makati, Cebu and
beyond the Philippines like Singapore, Japan, Australia, Malaysia, Korea, and many more,”
Alma explains.
With Citi Dining Privileges, Citi cardholders can truly savor the joys of having the most
rewarding cards in town.

The Morray’s New Orleans Restaurant was owned by a american and
has a buisiness partner in philippines. When the owner was died, the filipino
buisiness partner of the owner was become a owner of new orleans. We
have created a stunning restaurant on Orchard Street, where you can

craft beer and cocktails. MANILA, Philippines - Building a restaurant empire
doesn’t happen by chance. It entails years of learning, making mistakes, and
learning from them before one emerges triumphant.

Accidental restaurateur Raymund Magdaluyo of The Red Crab Group fame


knows these too well. At 25, Raymond gamely took on the challenge of running
the family restaurant business.

“My mom, Chiqui Eusebio, asked me to handle the publicity of The Red Crab in
Mimosa, Pampanga. I was a senior researcher at the Asian Institute of
Management (AIM). I didn’t want to let my mom down so I accepted the
challenge. I had no idea what I was up to at that time. It never occurred to me
that I would soon run the family business,” Raymund recalls.

His professor Tommy Lopez at AIM told him that it would be best if he could
define the seafood and crab dining in the country.

“Mr. Lopez encouraged me to find a niche that I can own. That’s what I did with
The Red Crab Alimango House,” he explains.

Raymund let his imagination run wild and started thinking of other resto
concepts that would tempt the palate of food-loving Filipinos. In 2004,
Raymond set sail and put up Blackbeard’s Seafood Island. A year later, he
launched Heaven ‘n’ Eggs, followed by ClawDaddy and Murray’s New Orleans
in 2006.

B. Scope Of Work

 The On the Job Trainee as a bartender is not that easy as you


think, being a bartender is not just all about mixing mocktails and
cocktails for your guest, it is also a service to entertain your guest and
to developed a friendship beetween a bartender and the guest. A
Bartender is the one who mix juice, mocktails, cocktails, and also
serve foods to guest in the bar. A bartender is also responsible for
answering the questions about the origin of the liqours, taste of
wine’s, wiskey’s, vodca and suggesting mocktails and cocktails to the
guest.
Being a bartender is enjoyable even if you make a wrong mix
of mocktails sometimes. Many things are not allowed but it is for your
discipline in your job. I enjoy being a traine as a bartender.

B. Scope Of Work

 My On Job Training as a TRAINEE revolves around the whole 3


months being a server, receptionist and also a back up of the
Clawdaddy’s servers. At first I found it very hard and tiring at the
same time, there were times that I’ve almost give up but then it
was a very new experience talking to some foreigner costumers
and entertain them as well, and also receive some tips from our
generous costumers. I am also able to see some actors and
actresses.

Being a server is enjoyable even there are a lot of thing that


you need to learn.

Week number Activities done


Week 1 My first week at my On Job Training
journey is very tiring yet very exciting
because all my first time happens there. It
is very overwhelming to welcome and serve
some guests.
Week 2 In order to be an effective server and back-
up of the regular servers at Clawdaddy’s
the manager told us about memorizing our
menu to be able to answer some guests
questions.
Week 3 Memorizing the content of the menu at
Clawdaddy’s is not that easy, and to be able
to that, I asked and gather some
informations from our servers and
remember that as well.
Week 4 In gathering some info’s I am now able to
answer some questions from the
costumers.
Week 5 In my OJT journey as a trainee I make a
mistakes sometimes and be able to learn
from it.
Week 6 On this week I receive some tip from our
generous costumer. I was happy because
it’s the first time I’ve ever receive a tip
worth 100 pesos.

Week 7 On my following weeks on my training I’ve


learned that there are different types of
costumers. And our manager told us how to
cope up and entertain them properly.
Week 8 As a receptionist, I’ve learned how to wear
make up to attract some guests and also
entertain them, I am now able to answer
their questions about our best seller food
and desserts. I am very proud of myself.

Week 9 On the remaining days of my training I am


very thankful of my co-OJT because they
are the one who help me improve my self
and also to our manager for accepting me
in their restaurant.
Week 10 On my week 10 our manager are happy
because I am now able to work very
effectively, thanks to the help of my co OJT
and to our manager for trusting me.
Week 11 I am about to finish my OJT experience and
I am a little bit sad yet very thankful.
Week 12 And finally my last week is very happy
because my journey will soon end. And
thankful also to all the support of my family
and friends.

Week no. Activities Done


Week 1 In my first week in my on the job training, I
was very excited. I was excited to learn many
things. My first week of OJT was very tiring
week cause I’m not very use to it. I enjoy It
because this week is very challenging.
Week 2 In my 2nd week the bartender offer me to be
his student and he will train me in bar to be a
bartender. In my 2nd week of OJT, I have lots
of mistakes in bar because I’m not well
trained and at first it was hard for me to mix
cocktails without copy.
Week 3 In my week 3 in OJT, our bartender gets a
vocational leave so that I am alone in the bar
and no one assist me in mixing and
entertaining the guest. I was trained by
myself.
Week 4 In my week 4 I was enjoying mixing cocktails
and entertaining guest by myself and I start
receiving tips from guest and to my trainer.
Week 5 This week I was assign in dining because
many costumer or guest are entering and
dining to our store and I have notice that it
was easy to me to be in bar and at the same
time in dining.
Week 6 I was sick in my job and I want to learn more
things. But it is ok to me to learn more by
myself, sometimes I was asking for me to
learn.

Week 7 In my following week in my OJT, I learn many


thing and mix of cocktails. I feel like a
professional bartender. I mix cocktail without
copy and I enjoying it.
Week 8 This week is like the other week. my English
language was enhance in entertaining guest.
My skills are improved and I receive tips from
guest and to my trainer.
Week 9 This week we have many questioning from
our manager. Many activities and oral exam. I
was tested in bar and they choose a cocktail
for me to mix and I did it without copy.
Week 10 This week I feel that the day was so fast. I’m
nearly finished my OJT. I enjoy my job and I
was close enough to crew and managers they
trust me In anything they command me.
Week 11 I was so thankful and I’m cared for my OJT
requirement in school. This week is so busy
and tiring week.
Week 12 This is my last week of my OJT. I will miss
mixing in bar and entertaining guest. I was
thankful to my co-OJT and to my Trainer who
train me well and give me knowledge in bar. I
was thankful to the manager for giving me
opportunity to train my skill and to improve
my knowledge.
