“Quality comes with patience”, a must remember motto in the production of Glutinous
Rice Cake or the Calamay. This business requires patience and a good technique before
Ingredients: The mixture to accomplish the product will be made up of glutinous rice, brown
sugar (muscovado) to achieve desired sweetness, coconut milk and the Gracilaria as the new
ingredient.
Quality of the Product: Stickiness and sweetness describes calamay. Before achieving the
desired stickiness of the product being loved by the costumers, a laborious process is to be done
first. Constant stirring cooks the ingredients evenly and makes the product last longer. A quality,
properly cooked calamay could last for a week. The sweetness of the product varies from
Packaging of the Product: The product will be wrapped in strips of clear plastic, placed in
brown paper or a bigger plastic per bundle with the product description, contact number and
address of the factory to advertise the product and for queries of the costumers. The date when
the product was made will also be placed including when it will be inconsumable. Putting up this
project introduce livelihood and to show other benefits taken from Gracilaria that it can be
processed to any products like the extension works of DMMMSU (gracilaria chips and noodles).

The Calamay Factory: Fresh and a good tasting Calamay will be produced following HACCP
safety measures from collecting raw materials, at the factory, during processing, packaging and
labeling of the product until its distribution, to ensure safety and satisfaction of the consumers.
To design and build in features that protect the food product, which is the Calamay, from
contamination is the ultimate goal of the project. The sanitary design features of the factory will
be thoroughly observed and strictly assessed. These designs include: a) premises, surroundings
and building site, b) exterior building design and construction features, and c) interior building
The factory will be housing cooking, packaging and labeling equipments for the product.
Purchase of the Product: Costumers could directly visit the factory and purchase the product or
deliveries could be done. Orders could be sent through a message, a call, or through the project
page. Orders and deliveries will be expected to be done on time to avoid conflicts with the
clients. The project will also be supplying local markets, stalls and homecoming gift centers
(pasalubong centers).
