 KUALA LUMPUR: Eddie Liew has been working on a research project using a low
temperature, fan drying technique to safely preserve the quality and taste of food
products for the past 10 years.
According to him, conventional techniques use hot air at 60 degrees Celsius, but the
high temperature tends to damage the pigments in lemon skin. He said other active
ingredients, such as antioxidants, vitamin C and some bioactive compounds and
nutrients could also be very sensitive to high temperature processing.
This is where cool-air drying technology plays a vital role. He said his low-temperature
preservation technique uses a heat-pump system and heat transfer module to generate
a low temperature, low humidity environment to dehydrate bio- origin products.

You are going to read an extract from an article. For questions 19 to 26, choose the correct

Meena is an established baker today. However,her life was never a bed of roses. Her story is a true
rags-to-riches story. She was diagnosed with an autoimmune condition that landed her in the hospital at
the tender age of 26. She was in the hospital for three months being a medical guinea pig. The doctors
were baffled by her physical condition. She was very upset because she had just obtained her Human
Resource degree and now, she was fighting for her life. She had also enrolled in a pastry chef course
before getting sick with the hope of starting her career as a pastry chef. She had mapped out her future
but the odds were against her. She was then caught in a whirlwind of medical complications, infections,
MRIs, tests, seizures, memory loss, stroke, ICU and operations. Her life was fragile and she was unsure
if she would come out of the hospital alive.

Doctors had given up hope on her and she felt so hopeless. However, she and her family members
as well as friends prayed fervently, hoping for a miracle. Suddenly, with God's grace, her health condition
took a turn for the better. She was then in the ICU when the miracle happened. She was feeling hopeless
and depressed and cried out to God to save her. She could feel His presence as she walked with Him
through a very long and dark tunnel. After that turning point, it was a smooth journey to complete
recovery. There were no lingering impairments or the need for ongoing medication. It was indeed a total
recovery! Her recovery gave her hope to continue living. Her top priority was to complete her pastry
course. She was an excellent pastry chef and was offered to design new desserts for the large hospitality
franchise that she worked for. This was prior to her hospital fiasco. However, she was left in a lurch as
her employer was not keen on having an employee who was sickly and had a stroke and seizures. To
make matters worse, her fiancé, now husband, had lost his job.

They were planning to start life afresh but now everything was bleak as they had no money. Life was
miserable as she was skinny, semi-bald, broke, jobless, and living in a moth-infested apartment She
began working at random jobs trying to make ends meet. It was very challenging for her especially as
she was still at the recovery stage. However, she was determined to set her life right. She wanted a safe
and secure job which paid her bill and gave her the sense of stability that she needed. However, the odds
did not deter her as she had faith in God and strongly believed that He would help her.

Soon enough, things began to look better for her when she received a call from her friend who wanted
her to bake a cake with sugar figurines for their wedding anniversary. The sugar figurines her friend was
referring to was none other than fondant icing, she had no experience at all in making fondant icing and
decorating cakes using this type of icing. However, that night, she taught herself how to make steam
fondant and decorated the cake.It was her first attempt, and it was brilliant! Her friend was so impressed
and paid her handsomely for the cake. This was the turning point in her career. She thoroughly enjoyed
baking the cake and handcrafting it into a beautiful piece of art. She was also swept off by the
encouraging feedback from friends and acquaintances on the beautiful cake. It tasted as pretty as it
looked.

It was then that she realised that she didn't want just any job. She didn't want to work for people who
underappreciated her work. She wanted to spend her time doing what she likes best - to create and bake
impressive cakes. She was comfortable working from home at her own pace rather than being dictated
by others. Today, she's the proud owner of Crazepop Cake School. She is living her dream with that first
sugar figurine cake. She works every day as a creative entrepreneur and teaches passionate like-minded
bakers.

The King of Fruits – Durian

Malaysia and her neighbours are blessed with a climate which favours the generous

growth of various types of fruits- rambutans, mangosteens, langsats, jackfruits and a host of

others. Among these, durian is undoubtedly the most popular and the most expensive too.

of Europeans born with special palate, most of them detest the smell of durians, which they liken

The tree has oblong tapering rounded at the base, and yellowish green flowers borne

along the older branches. A durian tree starts to bear fruits after five years of age and it can bear

fruits twice a year. 29 The fruit is large, about the size of a ruby ball. Its colour varies

from olive green to yellow. The hard, outer shell is covered in thorns, whose shape and size

differs depending on the type. When ripe, the custard-like-flesh inside can be sweet and creamy.

Ever since I was a young girl my favourite style of music has been jazz and blues. The first
ever CD that I bought was Chuck Berry’s Greatest Hits. Even now, whenever I hear one of
Chuck Berry’s songs I can’t help but tap my feet and hum along to the music. I just loved
music that made me want to dance.
C - Renuka, 17 years old
I started learning how to swim when I was five years old and I have been swimming ever
since. The reason I love swimming is that it can be extremely relaxing. I love the feeling of
floating on the water. I find that whenever I leave the pool I feel totally relaxed.

I think it’s important for me to learn how to cook. Maths and English are important, of course,
but we need other skills too to help us live in today’s world. I love cooking and I think I’m
really good at it. I don’t know why it isn’t difficult and it’s great fun.

I bought my first proper camera when I was 13. Before this, I had always enjoyed looking
through the photos when they had been developed. Since then my enthusiasm has grown
