that are used for all kinds of baked

and tools are used in the bake shop
industry because modern technology
continues to develop more and more
specialized, and technology involved

The bakery tools and equipment


are classified under two categories
and what are those?
Small equipment and large equipment,
Sir.
That’s correct! And how can we if
that’s a small or large equipment?
Small equipment are those tools and
utensils that are typically handheld or
small in size and play a crucial role in
the baking process.

Large equipment are those industrial or


commercial grade machines and
appliances designed to handle large
quantities of dough, batter or baked
goods. They are typically larger and more
powerful than their household
counterparts and are essential for efficient
& consistent baking operations.
You're all right. So, let's begin
discussing the different tools and
equipment under small equipment.

Our first equipment is Baking Tins.

There are many tins on the market


these days of all shapes, sizes, and
materials. You should prefer heavy
duty, silvered-colored tins. Why do
we have to choose Dark-colored
silicone bakeware tins?
Because it has a tendency to absorb heat
and make the sides of the cake dark.

Deck ovens are used to bake breads.


Well, that's true. Did you know that
there are single, double, and three
decked ovens available in the market.
Types of ovens the product trays or
molds are placed on the oven floor.
As what said before, it is used to
bake breads. Bread baked directly on
the floor of the ovens and not in pans
which often called hearth breads. So,
this is also used for baking breads
which equipped with steam injectors.

Is the meaning of Deck oven being


clear to all?

Okay good, Lets now move to
Refrigerator.

I know most of you have a


refrigerator in their house. So, you
must know what it is used to. It is
used to store foods to keep it fresh
especially the meats and fruits &
vegetables. In baking there are also
refrigerator. Can someone tell me
how it is differed from the refrigerator
in our home? The refrigerator in our home is used to
store foods to keep it fresh while the
refrigerator used in baking is used to
store food items at right temperature.

planetary cake mixture.

From its name planetary cake,


planetary cake mixture is an industrial
equipment conceived to prepare
pastry dough or other type of product,
replacing manual labor through a
mechanical system that allows to
produce, continuously, large
quantities of dough.

There are also two types of that mixture


in the market:
