Previous work on spiny yam Dioscorea esculenta PH22017000280 (Celada)


disclosed the process of producing flour from sun dried spiny yam and without
employing pre-drying treatments. Such may encourage the occurrence of enzymatic
and non-enzymatic reactions which could lead to browning or discoloration of products.
5 These reactions are undesirable due to its negative effects on the appearance,
development of off-flavors and losses in nutritional quality of food systems. Losses of
compounds with antioxidant properties can also occur during processing.

DETAILED DESCRIPTION:

Purple sweet potato flour is a powdered purple ingredient for baked and other
products and is produced by grinding dried steamed purple sweet potato locally known

Specification 5 as “Kamote”.

The formulation of the present utility model consist of this ingredient.

The process of producing purple sweet potato flour comprises the following
10 steps:
Select and segregate quality sweet potato (no damage, 2-3 inches in diameter).
Wash and clean the sweet potato with potable water to remove adhering soil and
extraneous materials. Peel off the skin of the sweet potato. Slice the sweet potato into
chips. Steam the sliced sweet potato chips at predetermined time. Oven-drying the
15 steamed sweet potato chips at predetermined heat temperature until a desired
moisture content is attained. Grind the dried sweet potato chips until fine and powdery.
Sieve the ground sweet potato chips to separate the fine from the coarse particles and
pack the resulting flour in polyethylene bags.

questions about it, such as:
 What problem does this solve?

profitably?) What are the toughest logistical challenges implied by the idea?
 How will (or would) you solve them?
 Do you have a prototype, sample or demonstration of an implementation of the idea (aka proof of concept)?

Consider how the person you’re trying to pitch views the world, and keep it in mind while developing
your pitch.
The better your pitch fits into their needs, perspectives, and desires, the greater your odds of being
successful (or even being listened to).

 Say something intelligent and interesting in a short sentence

 Provide the next level of detail down, adding in just enough interesting detail that the listener can get a clearer picture of your idea,
 Gain a deeper and more nuanced understanding of what you’re proposing.

There is always a way to do it if you are sufficiently compelled by your ideas to take on risks, and make
