greetings, welcome Welcome to Dumalag Vocational – Teachnical School as
your assessment Center.

I am WAYNE P. SALUDES, an accredited assessor for


COOKERY NC II

Before we proceed to the Assessment proper, I would like


to welcome MRS. ROSEMARIE GASCON, TESDA
Representative.

You don’t have to worry about her presence, she will not
to assess you.

She is here to oversee if my conduct of assessment is


prescribed methodology and standard set by assessment
and certification of TESDA

5. Purpose of Today I will administer the assessment for Cookery
assessment NC II.
The purpose of this assessment is to check the level of
your competency enumerated of Cookery
NC II qualification
6. The Cookery (Core Competencies)
NC II consists of 3 The cookery NC II was clustered into three projects
projects namely;
Prepare and cook hot meals
Prepare Cold Meals
Prepare Sweets

That task to be performed are


4.1.1 Prepare and cook hot meals
Prepare stocks, soups and sauces
Prepare main course (poultry, meat
and seafoods) intended for 1 person.

4.1.2 Prepare Cold Meals


Prepare appetizers
Prepare salads and dressings
Prepare sandwiches

4.1.3 Prepare Sweets

Prepare desserts

After you have done you may put your output to the
presentation table with your corresponding number.
7. Method of The method that I’m going to use for this assessment are
assessment demonstration and oral questioning
8. Result of assessment The result of assessment it could be Competent and not
yet competent

This type of Assessment is COC or Certificate of


Competency.

If you are rated not yet competent in any of the project or


you may take only the unit of competency that you are
rated not yet competent. And what you need to do is to
practice and review your module, if you are confident
enough you need to apply for reassessment at
Assessment Center. You may claim your COC signed by
Assessment Center Manager at Assessment Center with
3 working days after this assessment.

You may claim your CARS signed by Assessment Center


Manager at Assessment Center. And you may claim your
NC II Certificate at TESDA Provincial Office with 3
working days after this assessment. Bring 100 pesos for
certification, 2 passport size ID picture and bring with
you your CARS.

If you need any clarification with regards to my


instructions just don’t hesitate to ask me because I’m
very much willing to help you if you need to translate it
in vernacular then I will translate it to the vernacular
you can understand.

Assessment is monitor in TESDA trough CCTV. This


assessment is confidential. I, you and personnel inside
this assessment area are kept the result confidential.

If you are not satisfied with the result of your


assessment you need to see first the Tesda
representative regarding the appeal. If in case you appeal
is not address you are free to write an appeal to the
provincial office address to the Provincial director.
If you need personal necessity, our CR is located beside
the computer room, if you to buy your food and our
canteen is located at the ground floor.

5. Don’t disturb you co- candidates

ask you related to your demonstration, and I will give
feedback. While you are performing the task, I will

Since you have finished the demonstration,

I will give you first question to know your underpinning


knowledge
1. What is the specific tool is used in preparing chicken
glazes.
2. Can you make chicken glaze without flour? Why?
3. Why is it important that garlic and honey are bubbling
before adding the soy sauce?

Note: Ask question to all project if necessarily

For Competent: Based on my observation your oral question you have


answer satisfactorily
Based on my observation, you perform well on preparing
dishes because you finished all products. However, you
need to improve your skills in cleaning and maintaining
kitchen premises because it takes longer time for you to
finish this task. You answered all the questions
correctly, based on my overall assessment I found out
that you are COMPETENT.

You may claim your CARS signed by the Assessment


Center Manager at Assessment Center
And you can claim your NC II Certificate at TESDA
Provincial Office with 3 working days after this
assessment. Bring 100 pesos for certification fee, 2 pass
port size ID picture and present your CARS.

Competent performing the three projects.

I have observed in your project 1 Prepare and cook hot


meals
You prepare thick soup that has a good quality in
consistency in texture and color. You prepare
seafood specifically in garlic shrimp I have observed
that it’s appetizing in terms of appearance and you
present in a correct plate and have siding.

I have observed in your Project 2 Prepare Cold Meals


you prepare ceasar salad, you wash the vegetable
properly and check if there is damage part of
vegetable and you cut the vegetable in one size and
you put the appropriate dressing for ceasar salad.
Then you prepare a clubhouse sandwich and I have
observed that the filling are properly arrange
(cabbage….) and the vegetable are fresh and you
presented in a correct plate for sandwich.

I have observed in Project 3 Prepare Sweets that you


prepare Mango crepe you measure the ingredients
properly but the creep suddenly becomes dark brown
because of overheat. So, the result of the assessment is
not yet competent but you have the two projects that
pass the project prepare and cook hot meals and project
2 prepare cold meals because you are rated not yet
competent in the Project 3 which is prepare sweets but
you don’t have to worry because you re-assess only in
the competency which you are rated not yet competent.
You need to practice the competency specifically on the
Project 3 Prepare sweets if you are confident enough you
need to apply for re assessment to the assessment
center.

You can claim your CARS to the assessment Center.
