Indroduction
I am working as a cook in a Italian restaurant. The name of my restaurant is The groove train. It is
frenchaise restaurant . They have more than 30 store in all over Australian. They have Dine in and take
away facility available. The restaurant where I work is located at Delacombe town centre ballarat
Victoria. We do all breakfast, lunch and dinner. We open at 9 a.m on weekdays and close 9:30 on
weekdays and similarly opent at 8:30 am and close at 10:30 p.m on weekends.
Skill of a cook
As a cook we all need have various skills. First of all good communication skills. It is the one of the most
important skill as cook we should have. We should communicate with team our team members on a
regular basis so that they what going on and we should inform our head which stock are low so he can
order that stock. We should inform our manager/headchef if there is defect on machinery equipment.
There may be different method of communication. Clear communication always make our work easier
and help us achieve our goal. As a cook we should have good knife skills. It is also important because
each cook is responsible for prepration of their section. And without good knife skills you cant finish your
prep . So before applying cook job we should make our knife skills very good. There are many other skills
like problem solving skill, team work skill etc.
Task of cook
There is many task of cook . They must always focus on personal and worlpace hygienic practices. As a
cook it is our responsibility that anything which we serve to customer is safe and hygienic to eat. We
should also know how to operate the machinery equipment like oven,deep fryer, griil and other many.
Because it the work of cook to operate this machinery at the start of shift. And cook should also check
their section properly before start any shift. Make sure they have done enough prep for that day , so
that they don’t have to run here and there in the middle of the service. They should all miss-en =place.
The cook should always serve quality food regardless how beusy the place is. The cook should know how
to play with ingredients. If cook need holiday they should inform headchef 2 weeks before so that he can
manage staff. We should very responsibility towards work because of one person fault the whole team
going be in trouble. As a cook you should also need to train others so you should be also good at
teaching others. Motivate team members to perform bettet,control wastage of food. P.P.E must always
wear on workplace. Knowledge of diabetic,specific diets ,nuts and other allergic food.

In kitchen there are often things can go wrong some of may we can fix some of we cant . Some time
front staff take wrong order ,some time they can take food of one table to another. In beusy time staff
may be sick. Some time staff start late. All this thing can be fix if we have more staff but there is thing
like in between service pizza oven not working and if there is power cut we cant fix this thing. Sometime
there may be miscommunication happen between team members.
As I previously mention team work is vital part of kitchen. The team leader must focus every one is doing
there job. Ask everyone if they need anything or any prep done before the service. Make sure every
thing is time to date. S/he must divided the work in team member in equal basis. They can take feed

back from customer and if there is anything they need to fixed that must fixed straightway. Team leader
must provide target to the team member and provide everything to achieve target. Provide training to
the team member if they need. Invest in the good and honest staff for better perfumance. If some team
member done good job motivate and encourage to them more better. Always look back to your team
member .
