Zarda,Kimam and
Tobacco
Introduction :Commercial tobacco is obtained by processing
the leaves of the plant genus Nicotana. The processed leaves,
when smoked, chewed or inhaled, exert a mild narcotic effect
on the human system which is additive. Tobacco products, fall
under three groups -Smoking, chewing and inhaling. Cigars,
cheroots, cigarettes, bidies, pipe and hookah tobacco mix-
tures are the products which are smoked. There are various
types of preparations which are chewed. Snuff is a product
which is inhaled. Chewing tobaccos had an early develop-
ment, though its maximum production and consumption were
reached only just after the close of the last century. Chewing
tobacco is often taken with pan (betel leaf). Variations of
chewing tobacco preparations comprise a large number of
items e.g. Surti, Zarda, Kimam, Dokta and Sukha. Of course
surti is highly perfumed and deliciously prepared. Zarda is
a coarser variety of surti. Tobacco products are manufac-
tured from tobacco. Tobacco is grown in India in two distinct
botanical species, N. tabacum and N. rustica. The largest cul-
tivated area is, however, under N. tabacum which is grown all
over the country, though the bulk is produced in the south.
Since M. rustica requires a cooler climate, its cultivation is
confined mainly to northern and north-eastern parts of the
country. Tobacco thrives well under tropical, sub tropical and
temperate climate. This tobacco is propagated by seeds. The
quality and uniformity of crop depends on the purity of seeds,
seedlings are raised in nursery beds of partially sterilised soil.
Many kinds of chewing tobacco are manufactured, some im-
portant types are surti, zarda, kimam, dokta, sukha etc. The
surti is manufactured by soaking, drying, mixing* again soak-
ing, fermentation, masceration treatment with honey, pill prepa-
ration, then drying of Tobacco pills and then essenced. Zarda
manufacture is nearly, same as that of surti. *The tobacco
leaves are stripped, softened by steeping in water, then pre-
pare paste and dry in sun, then broken into granules.Kimam
manufacturing is nearly the same as that of surti. The only
difference underlying is that the surti is marketed in the form of
soiled and kimam is marketed in'the form of a thick liquid of
viscous consistency.
Properties (Tobacco and Tobacco Products) : The chemi-
cal composition of tobacco is greatly influenced by genetic
and environmental factors. Moreover the composition of the
leaves of an individual plant varies markedly with their position
on the stem. For example the middle 8-9 leaves of Harrison
special, the main Virginia tobacco grown in India are higher in
starch, sugars, and nitrogen content than the other leaves.
The leaves contain a complex mixture of over 200 chemical
compounds. A large number of other compounds are also
identified in tobacco smoke. The total organic constituents
amount to 75-90 percent (moisture free basis) and comprise
carbohydrates to the extent of 25-50 percent, alkaloids and
other nitrogenous substances, organic acids, polyphenols and
pigments, oils and resins, enzymes and others. The average
moisture content of freshly harvested tobacco leaf is 80-90
percent and of dried processed leaf 10-15 percent. The qual-
ity of the cured product is greatly influenced by the starch and
moisture contents of the green leaf. Tobacco marketed as
Hookah tobacco is divided into two types viz. Krowah which
is strong and pungent and Meetha' which is sweet and mild.
Zarda, Kimam, Surti, Dokta and Sukha are preparations of
chewing tobacco with variations of aroma, flavour and taste
but all produce a mild narcotic effect on the human system
which is additive.
Uses and Application Tobacco products fall under three groups
—smoking, chewing and inhaling. -- Cigars, cheroots,
cigarettes, bidies, pipe and hookah tobacco mixtures are
products which are smoked. — Many types of chewing
tobacco are manufactured and some of the important prod-
ucts are Surti, Kimam, Dokta, Sukha etc. — Snuff is the
product which is inhaled. — Tobacco, Zarda and Kimam are
additives in betel leaves for imparting a pleasant taste and
aroma in the mouth and thus impart a stimulating effect. All the
tobacco products have a large market in India and are con-
sumed in large quantities by people whether they are poor or
rich. These are consumed in various forms on social occa-
sions, ceremonies, parties, gatherings and in negotiating busi-
ness transactions.
B.I.S. Specification :
1. IS : 2344-1973. Chewing tobacco, zarda flake type (first
re-vision) (Reaffirmed 1985). Prescribes requirements of qual-
ity, packing and methods of test for chewing tobacco, zarda
flake type manufactured in India.
2. IS : 7753-1975. Method for expression of analytical test
results of tobacco.
3. IS : 3042-1973. Chewing tobacco, manufactured minced
type. Prescribes requirements for freedom from mould attack,
harmful substances and additives on drying, nicotine, total
ash, sand and silica, calcium, arsenic, lead and also prescribes

methods of test, sampling and packing.
4. IS: 9379-1979. Method for determination of moisture in
tobacco and tobacco products (Reaffirmed 1986),

PROCESS FLOW SHEET FOR MANUFACTURE OF KIMAM :
Manufacturing Process
Surti : There are a number of methods of preparing surti. How-
ever, the essential operations are soaking the tobacco leaves,
drying them before mixing various spices, soaking again for
fermentation, mascerating them into a pulp and then treating
the pulp with honey or treacle made from molasses. The
whole mass is then made into pills and dried in the shade or
in a specially constructed hot chamber. To impart a delicate
scent to the pills, a piece of fine muslin is moistened in some
natural attar, such as attar of rose, hena or keora and a
quantity of pills is wrapped in this cloth. The cloth is then
rubbed between the palms. This may be done just before
packing. To give brilliant exterior appearance the pills are
coated with gold or silver foils. Zarda. The constituents in the
manufacture of zarda are much the same as those of surti.
The tobacco leaves first of all are stripped of their stalks and
midribs, if this has not been done earlier. These are then
softened by steeping the same in water or boiling in it. The
leaves are then made into a paste. Sometimes a pulpy extract
of moistened leaves is drawn by straining through cloth. The
paste is dried in the sur in a shallow plate and is then broken
into granules, which may be coatee with gold or silver or
mixed with silver dust or allowed to remain plain. The cheaper
grades like culi zarda and the pati zarda are made from bidi
leaves. The granules of zarda after drying, are packed in
polyethylene, pouches, glass or tinplate containers, with a
tamper proof seal. The packets are marked with description
of contents, name of manufacturer, brand, net weight of
contents, BIS specification mark, date of manufacture. Kimam.
The principle underlying the manufacture of kimam is almost
the same as that of surti. The only difference is that, the surti
is marketed in solid form while kimam is marketed in the form
of a thick liquid of a viscous consistency. Usually the water
that is rejected after treating tobacco leaves in boiling water,
is made use of in the composition of the kimam. The spices
are allowed to ferment in the tobacco wash. The proportion
of tobacco wash and the spices are so adjusted that the
product after the completion of fermentation operation at-
tains a syrupy consistency. Finally just before packing natu-
ral attars such as ottos of hena, patchouli etc. are added.

Market Potential and Scope
Chewing tobacco as its name is a tobacco preparation for
chewing purposes, often taken with paan (betel leaf).
Variation of chewing tobacco preparation include a large
number of items such as surti, zarda, kimam, dokta and
sukha. Of these, surti is highly perfumed and prepared
with ingredients which provide delicious taste while chew-
ing the product. Zarda is a coarser variety of surti.
Uttar Pradesh and Delhi are the most important areas for
die manufacture of chewing tobacco and account for al-
most 85 percent of the total quantity manufactured. In
Uttar Pradesh the manufacture is carried out in many town
but the important centres are Luckno w and Banaras.
India is the third largest and most important tobacco pro-
ducing country next only to U.S.A. and main land China
accounts for about 8 percent of the total world tobacco
production.
Statistics on tobacco products are not maintained by any
official or other agencies. There is hardly any machinery
for the dissemination of prices of tobacco products. The
producers usually depend on the information given by the
traders. The traders get in touch with one another to get
market information. The tobacco products are of consid-
erable importance in the socio economic life of the coun-
try. The manufacture and processing of tobacco prod-
ucts is confined to certain concentrated areas while the
consumers are spread throughout the country. The de-
mand remains more or less the same throughout the year
and the consumption of tobacco products is related with
the betel leaf consumption in the country. Betel Leaf is
taken along with different ingredients and die consumers
are very selective about the ingredients as betel is pre-
pared in different ways according to die choice of the
consumers. Widi die increasing population and the grow-
ing number of social gadierings, ceremonial occasions
and parties the consumption of such tobacco products is
likely to create a very large market and hence provide a
good scope for new entrants in the field.

There will be penalty for wrong answers marked in the objective tests which will result in
negative marks for every wrong answer @ one-fourth or 0.25 of the marks assigned to that
question. If the total of the penalty for a test is in fraction, the marks obtained will be rounded off
to the nearest integer.
Note:The question paper for above test except the Test of English Language will be printed
bilingual i.e. English and Hindi. Bank will decide the minimum cut-off marks for each test as well as
Total Weightage Marks . Mere eligibility/ pass in the Written Examination shall not vest any right in
a candidate for being called for Personal Interview. Depending upon the number of vacancies,
only those candidates who rank sufficiently high in the order of merit in the written examination as

Puducherry, Ludhiana, Jaipur ,Chennai, Coimbatore, Madurai, Lucknow, Dehradun, Kolkata. All
eligible candidates who wish to avail of Pre-Examination Training should fill in the relevant column
in the ONLINE APPLICATION. All expenses regarding travelling, boarding, lodging etc. will be borne
by the candidate for attending the pre-examination training programme at the concerned Centres.
The Bank however reserves the right to cancel the centres indicated for the training depending
upon the response, administrative feasibility etc. The Bank also reserves the right to allot the
candidates to any of the centres other than the one he/ she has opted for 8. Action against
candidates found guilty of misconduct: Candidates are advised in their own interest that they
should not furnish any particulars that are false, tampered, fabricated or suppress any material

information while filling up the application form and submitting the certified copies/testimonials. At
the time of written examination/interview, if a candidate is ( or has been) found guilty of: (i) Using
information during the examination or (ii) Impersonating or procuring impersonation by any
person or (iii) Misbehaving in the examination hall or
(iv) Taking away the question booklet/answer sheet from the examination hall or (v) Resorting to
any irregular or improper means in connection with his/her candidature for selection or (vi)
Obtaining support for his/her candidature by any means, such a candidate may in addition to
rendering himself/herself liable to criminal prosecution, be liable :
(a) to be disqualified from the examination for which he/she is a candidate
(b) to be debarred, either permanently or for a specified period, from any examination or recruit-
ment conducted by Bank/IBPS.
(vii) The Bank/IIBPS would be analysing the responses of a candidate with other appeared
candidates to detect unusual/patterns of responses. If as per the laid down procedure, it is
suspected that the responses have been shared and the scores obtained are not genuine/valid,
the Bank reserves the right to cancel his candidature.
9. Important General Instructions: -
a. All the eligible candidates who have submitted their online applications properly in time will be
administered a written examination, without verification of their age or qualification or category
or any other eligibility Criteria with relevance to documents and will be purely on provisional
basis, on the strength of the information provided by them in the online application. The candi-
dates must therefore, ensure that they fulfill all the eligibility, has in his/her possession the
requisite documents and certificates specified by the Bank, and that the particulars furnished in
the on-line application are true and correct in all respects. Mere admission to the written exami-
nation and /or passing the Test and being invited by the Bank for the Personal Interview shall not
imply that the Bank has been satisfied beyond doubt about the candidate’s eligibility. Bank has the
right to cancel candidature at any stage if found that any candidate is not fulfilling the eligibility
criteria. If any candidate found ineligible even after appointment his/her services are liable to be
terminated b. Candidates are required to apply only 'ONLINE'. Any other form of application shall
be rejected. c. The Bank is free to reject any application, at any stage of the recruitment process,
if the candidate is found ineligible for the post. The decision of the Bank in any matter relating to

Administration on regular basis in the scale of pay PB-1 i.e. Rs.5200-20,200/-along with Grade

5. Examination Fee : Candidates other than S.T/S.C are required to deposit Rs.75/-

examination fee.
