PALERMO PASTA SALAD

5 #s linguine, cooked al dente in boiling, salted water, rinsed & tossed lightly in
olive oil

4C. cherry tomatoes, halved


2 C. Walnuts, roughly chopped
1 2 C. pinenuts, toasted until golden brown
1 # Red Onion, diced
2 C. Black Olives
6 C. Spinach, roughly chopped
3 C fresh basil, chiffonnade
Vinaigrette:
3 Cups olive oil
1 2 C. Lemon Juice
2 T sea salt
2 T black pepper
1T crushed red pepper
2T. Garlic powder

Add prepared veggies to the pasta. Make vinaigrette. Add to pasta, and toss well.
BE SURE TO CHECK SEASONINGS AND ADJUST. MY NAME IS ON
THIS SALAD, THEREFORE IT HAS TO BE GOOD! (Ask me to taste it if you
aren=t sure.)

- Prep vegetables.

- Fold vegetables gently into pasta & seasoning mix.
