It has a round and flat shape with yellow skin and brown stem like Thai fruit. For this recipe,
the ingredients include rice flour, steamed yellow mung bean, coconut milk, sugar and of course
some nutmeg powder. Khanom Saneh Jaan represents propitiousness. The name carries the
meaning “whoever consumes this Thai dessert will charm and all those around them.”

Som Chun, a Thai dessert, is one type of a ‘fruit in syrup’ with a perfect combination of sour
and sweet tastes. The distinctive characteristic of this dessert is its fresh aroma created by the
signature ingredient of “bitter orange peel” (Som Saa). Added to this are sour mango, fresh
ginger, and fried shallot. All ingredients work well together, making this dessert incredibly re-
freshing.
Sticky rice with coconut cream is one of Thai’s favorite desserts. The type of sticky rice suitable
for dessert is Kiew Ngu which has beautiful long grains and looks so scrumptious when mixed
with coconut milk. Before steaming the glutinous rice, it needs to be washed with alum to make
it shine. Good sticky rice in coconut cream should have a beautiful full shape, be shiny, soft and
sticky, sweet and creamy, not too salty, and should have the alluring aroma of coconut cream
and pandan leaf. Sticky rice in coconut cream can be eaten with sweet and fragrant grinded fish,
sweet and salty ground prawn, steamed custard, and pulled coconut in sugar cane. Each topping
has a different taste to suit different likings.
Khao Mao Raang is an old-fashioned Thai dessert specially made when the rice is almost ripe.
Khao Mao is green young grain. To make Khao Mao Raang, the following ingredients are required:
- Coconut cream made from fine palm sugar mixed well with freshly squeezed undiluted
coconut milk.
- Khao Mao roasted until golden brown.
- Taro steamed and cooked just right.
Khao Mao Raang is sure to taste scrumptious and delectable.

ขนมหม้อแกง หรือขนมกุมภมาศ เป็นขนมไทยประเภทอบ ซึ่งได้อิทธิพลมาจากโปรตุเกส อาจจะเป็นขนมที่
นิยมท�ำในหมู่ชาวโปรตุเกสที่อพยบเข้ามาอยู่ที่อยุธยา แต่ผู้ที่ท�ำให้ขนมหม้อแกงและขนมตระกูลทองมีชื่อเสียงตกทอด
มาถึงปัจจุบันคือ ท้าวทองกีบม้า ห้วหน้าห้องเครื่องต้น ในพระราชส�ำนักสมัยสมเด็จพระนารายณ์มหาราช เธอมีนาม
เดิมว่า มารี กีมาร์ เป็นลูกครึ่งโปรตุเกส ญี่ปุ่น และเป็นภรรยาของเจ้าพระยาวิชาเยนทร์
ขนมหม้อแกงท�ำจากไข่ขาวเป็นหลัก เนื่องจากได้น�ำไข่แดงไปท�ำขนมอื่นๆ เช่น ทองหยอด ฝอยทอง ขนมหม้อแกงมี

วุ้นกะทิ
เป็นขนมไทยที่ใช้ผงวุน้ เป็นหลัก วุน้ ท�ำมาจาก สาหร่ายทะเลน�ำมาปรุงขนมไทยให้มคี วามอยูต่ วั วุน้ กะทิ มีความ
หอมทั้ง กะทิ และน�้ำมะพร้าว
กลีบล�ำดวนหรือดอกล�ำดวน
เป็นขนมไทยประเภทอบลักษณะเหมือนดอกล�ำดวน ดอกไม้หอมอันเป็นที่นิยม ขนมนี้ ได้รับอิทธิพลมาจาก
“คุกกี้ช็อดเบรด” ของยุโรป เป็นขนมที่หอมกลิ่นเทียนอบ หวานก�ำลังดี เหมาะกับการรับประทานกับน�้ำชายามบ่าย
Woon Kati
Woon Kati’s ingredient is jelly powder. It is made from seaweed that makes jelly firm
and stable. Coconut jelly smells enchantingly of coconut milk and coconut juice.
Look Choop
Look Choop is a Thai dessert dating back to the time of King Rama V and influenced by
the Portugese. Instead of almond, mung bean paste is mixed with coconut milk and sugar, and
then left in a closed container with smoke of a scented candle. It is then sculpted into beautiful
shapes of miniature fruits, glazed with jelly for a shiny effect. It was a very popular Thai dessert
for the ladies of the court and other high-ranking ladies to make. Look Choop also carries a
propitious meaning – completeness of family and abundance of plant and rice.
ขนมทองเอก
เป็นขนมไทยในช่วงสมัยรัชกาลที่5 มีความเป็นมงคล ค�ำว่า เอก หมายถึง ความเป็นที่1 เป็นขนมที่ฝ่ายเจ้าบ่าว
และฝ่ายเจ้าสาวต่างต้องการเป็นฝ่ายท�ำ เพราะเชื่อกันว่า ผู้ท�ำจะได้เป็นเอก เป็นหนึ่งในการครองชีวิตคู่ และส่วนบน
ของทองเอกจะต้องแปะ “ทองค�ำเปลว” เสมอ

ขนมฝอยทอง เป็นขนมไทยที่ได้รับอิทธิพลมาจากชาวโปรตุเกส ท�ำจากไข่แดง น�้ำตาล น�้ำลอยดอกมะลิ โรย
ให้เป็นเส้นคล้ายเส้นไหม ถือว่าเป็นขนมไทยมงคล (ฝอยทอง มีความหมายว่า คูบ่ า่ วสาว จะได้ครองรักครองเรือนมีชวี ติ

ทองหยิบ
ขนมทองหยิบ หรือ ขนมทองกีบม้า เป็นขนมไทยในสมัยกรุงศรีอยุธยา ได้รับอิทธิพลมาจากชาว
โปรตุเกส คือท้าวทองกีบม้า ท่านได้น�ำไข่แดง กับน�้ำเชื่อมมาปรุงแต่งขนม เคี่ยวน�้ำเชื่อมเสร็จแล้ว ตีไข่ให้
ขึ้นฟูแล้วหยอดเป็นวงกลมขณะน�้ำเชื่อมนิ่งแล้วจึงเปิดไฟให้น�้ำเชื่อมเดือดและไข่สุก ตักแช่ในน�้ำเชื่อมใส
พออุ่นหยิบให้เป็น3หยิบ-12หยิบ ความหมาย ขอให้ร�่ำรวยมั่งคั่งมีเงินมีทองใช้สอยไม่ขาดมือ

ขนมทองหยอด เป็นขนมไทยที่ได้รบั อิทธิพลจากท้าวทองกีบม้า เป็นขนมไทยมีลกั ษณะเหมือนหยด

เม็ดขนุน
ขนมชนิดนี้ เป็นขนมไทยโบราณในสมัยรัตนโกสินทร์ ที่เรียกว่าเม็ดขนุน เพราะท�ำมาจากเม็ดขนุน
Khanom Thong Ek
Khanom Thong Ek originated during the time of King Rama V. It connotes the idea of propi-
tiousness and means “to be the first and excellent”. Both the bride and groom would like to
make this dessert since they believe that whoever makes it will be great and outstanding, and
the dominant one in the marriage. On top of the dessert there must always be “gold foil”.
Foy Thong
Khanom Foy Thong is a Portuguese-influenced Thai dessert made from egg yolk, sugar, and
jasmine scented water, sprinkled to form the shape of silk threads. Foy Thong means a long-last-
ing marriage for bride and groom, and a long life like the gold threads.
Thong Yip
Khanom Thong Yip or Khanom Thong Kip Ma is a Thai dessert dating back to the Ayutthaya
period. The dessert has been influenced by Tao Thong Kip Ma. Tao Thong Kip Ma used eggs and
syrup to make Thong Yip by beating the egg until rising and dropping a dollop of the mixture
into syrup and lighting the stove. When cooked, remove it out of the pan, put it in clear syrup
and wait until it becomes warm before using the fingers to create the shape of a flower.
Thong Yod
Khanom Thong Yod is a Thai dessert influenced by Thao Thong Kip Ma. Its shape is similar to
that of a drop of water. The meaning of this dessert is wealthy and prosperous.
Med Khanoon
Med Khanoon, a traditional Thai dessert, originated in the Rattanakosin period. The name of
the dessert is derived from the main ingredient med khanoon or jackfruit seeds, boiled, grinded
and pasted. It is then mixed well with sugar, coconut milk and salt until it starts to become
sticky enough to make into a “Jackfruit seed” shape. Then it is dipped into egg yolk, dropped
into syrup in a pan, and the stove lit. When cooked, it is placed and left in clear syrup. Nowadays,
mung beans can be used to replace jackfruit seeds. Med Kanoon is a propitious dessert meaning
“there are always people who give support and help, whether it is work or life.”
This is a traditional Thai dessert with the main ingredients of rice flour, tapioca flour and Ar-
rowroot Flour. At present, however, the recipe has been adapted using only tapioca flour to
create a clear texture of krong krang, making it a lot different from the past version. Saneh Jaan
Restaurant therefore, would like to preserve its originality by sharing the accurate characteris-
tics of this dessert. Krong krang ball should be of white colour, soft and sticky. A small amount
of coconut cream should be poured on top of the krong krang balls, sprinkled with black or
white sesame, or both. Sesame should be crushed to exude a pleasant smell. Coconut cream
should be a little bit salty to reduce the creamy taste of the coconut milk.

This Thai dessert is over 200 years old. Nowadays, it has been adapted to be more colourful
using natural colours. It goes well with coconut cream scented with pandan leaf and coconut
juice with the sweet taste from sugar. Glutinous rice flour creates stickiness and softness. This
dish can be served with sweet poached egg and sprinkled with young coconut meat.
A traditional dessert, Sarim exudes an amazing aroma both from the inside and outside as well
as being so refreshing. The scent is produced by fragrant flour, jasmine syrup and a scented
candle, with the coolness created by small ice cubes or originally a little bit of Borneol flakes,
and colour from the pandan leaf, butterfly pea, or the inside of a sappan tree as preferred. This
dish works well after consuming a very hot Thai dish.
Seasonal fruits are sweeter and more scrumptious than non-seasonal fruits. Saneh Jaan
is meticulous in selecting the finest fruits of each season; for example, sweet and aro-
matic mangoes and smooth durians in the hot season, santol, salak, rambutan, and man-
gosteen in the rainy season, and sweet melons, orange, monkey apple, and others in
winter.
Coconut Ice Cream is a Thai traditional ice cream created with two layers of tastes: a clear sweet
taste of coconut juice like a sorbet and a sweet and nutty taste of coconut milk ice cream. If you
like cinnamon, sprinkle it on top of the ice cream as much as you prefer. As for a two in one,
indulge half of the original flavor of the ice cream and sprinkle on cinnamon later so that you
can taste the ice cream and scent the smell of the cinnamon until the last drop.
