This paper discusses Pisang Epe, which is one of Indonesia's culinary


specialties that has long been a favorite of the community. The deliciousness and
uniqueness of the way it is served make Pisang Epe have a special place in the
culinary heritage of the archipelago. This paper aims to reveal the origins,
manufacturing process, and cultural values contained in banana epe. Apart from
being a delicious dish, banana epe also plays an important role in preserving
Indonesia's culinary traditions. Let's explore more about the rich flavors and

CHAPTER 1

INTRODUCTION

1.1 Background
Pisang epe is a specialty of Makassar, South Sulawesi, which is also
popular in Pare Pare. It is made from flaked kepok bananas, grilled over hot
coals using a special tool called "anglo", and served with brown sugar sauce.
Pisang epe has a long history and is thought to have been a meal for the nobles
of the Gowa-Tallo Kingdom in the 16th-19th centuries. Then, based on its
authentic characteristics, it was confirmed that this snack originated from
Makassar. Pisang epe has become a culinary symbol of Makassar and a popular
dish among the general public. The process of making banana epe involves
roasting ripe bananas over hot coals using a special tool called "anglo". Pisang
epe also has various benefits, mainly because the ingredients used are made
from fruits such as banana, durian, and coconut, which are good to eat for
anyone except people who have certain diseases. Pisang epe is also the main
source of income for the people of Pare Pare, so visitors who come to the city
can find many banana epe sellers. Besides banana epe, Pare Pare is also known
for its seafood, as the majority of street vendors along Losari Beach also sell
seafood.
Parepare is a city in South Sulawesi, Indonesia, which is famous for its
specialty food, pisang epe. Pisang epe is a type of food made from flattened
bananas, then baked, and served with a choice of toppings, such as caramel
sauce, cheese, or chocolate. This food is an important part of Pare Pare's
culinary heritage and is often sold in various places, from street vendors to
restaurants. Pisang epe has become a culinary icon that is closely associated
with the identity of the city of Pare Pare, and is often a culinary tourism
attraction for visitors. The delicious and unique taste of Pare Pare's banana epe
makes it one of the must-try culinary delights when visiting the city.
There are many varieties of banana-based dishes but this menu is
slightly different from other banana menus, Pisang Epe is one of the banana-
based foods that has its own uniqueness. Pisang epe if associated with
nutritional issues, certainly has many benefits, mainly because the ingredients
used are made from fruits such as bananas, durian, coconut etc. which are good
to eat for anyone except people who have certain diseases such as DM disease,
it is because the carbohydrate and sugar content is very high so it is not good
for consumption for people suffering from diseases like this.

DISCUSSION

2.1 Community Decsription


The Pisang Epe business run by Mrs. Hj. Sukmawati, this business has been
going on for quite a long time, but it cannot be ascertained exactly what year Mrs.
Aji Sukmawati started her business. Nevertheless, we can see the development of
this business from the beginning until now.
Initially, before Mrs. Hj. Sukmawati focused on selling Pisang Epe, she sold
various types of fried foods. In the business, she tried to offer different variations
of fried foods in order to attract consumers' attention. With a wide selection of fried
foods, this business began to attract attention and get loyal customers.
Over time, Mrs. Hj. Sukmawati's business grew. She saw great potential in
selling Pisang Epe and decided to sell Pisang Epe with a variety of different flavors
and toppings. This is done so that her business stands out and can compete with
other similar businesses. By offering delicious and innovative Pisang Epe, Mrs. Aji
Sukmawati managed to captivate the hearts of many customers.
To start her business, Mrs. Hj Sukmawati used an initial capital of around 1
million rupiah. Although her initial capital was fairly small, she was able to manage
and develop her business well. The profit earned from this Pisang Epe business is
also quite lucrative. On average, Mrs. Aji Sukmawati is able to get a profit of
between 200 thousand to 400 thousand rupiah per day.
In managing her business, Mrs. Sukmawati is also aware of the importance
of efficiency and effectiveness. She uses high quality ingredients so as to maintain
the original taste of the ingredients. Furthermore, she employs 2 employees to assist
in the production and sales process. These employees assist Mrs. Aji Sukmawati in
preparing the ingredients, providing variety of flavors and toppings, and serving
customers well.
With these employees, Mrs. Aji Sukmawati can focus more on managing
the business and developing new ideas for Pisang Epe. She can also provide better
service to customers, so that customers feel satisfied and come back again to buy
Pisang Epe on the beach where Mrs. Aji Sukmawati sells.
Overall, the Pisang Epe business run by Mrs. Aji Sukmawati has
experienced significant development. With limited initial capital but equipped with
creativity, innovation, and hard work, Mrs. Aji Sukmawati managed to make her
business a success. The profits she earns every day show that Pisang Epe is not only
a delicious food, but also a profitable business opportunity.

2.2 The location of the observation area
Pisang epe, Parepare's signature snack, is located on the seafront behind
Pasar Senggol, creating a unique experience with a combination of delicious
flavors and relaxing ocean views. With its strategic location, visitors can savor
the delicacy of banana epe while enjoying the sea breeze and the view of the
bustling harbor, making this culinary experience more than just a taste of local
food, but also a taste of the natural beauty that comes with it.Pisang epe here is
not just a food, but also part of a carefully preserved culinary heritage. With
traditional banana epe-making techniques still maintained, every bite is a
perfect blend of banana softness and coconut sauce deliciousness. If you're
looking for a harmonious blend of culinary delights and stunning natural
scenery, the banana epe location on the seafront behind Pasar Senggol Parepare
is a destination worth exploring.

2.3 The resulting business opportunity strategy and what are the results of
the SWOT analysis
a. Strengths
The success of Pisang Epe Ibu Hj. Sukmawati is not only reflected in the
visits of TikTok celebs, but also in its dominance in the local banana epe
market. Compared to a number of competing vendors, Ibu Hj Sukmawati's
product has not only garnered attention, but also significant support from
consumers, making it a calculated top choice.
Not only that, the interest in Mrs. Hj. Sukmawati's Pisang Epe is not only
limited to celebrity popularity, but also to the unique and unparalleled taste
enjoyment. This unique flavor is the main attraction that makes this product
dominate the market among various banana epe sellers in the local area.
b. Weaknesses
However, there is one aspect that needs serious attention, and that is the
condition of the carts, which have not received enough renovation. While
the product is of unparalleled quality and taste, the physical appearance of
the selling point also plays an important role in attracting customers. Hence,

investment in cart refurbishment can provide a significant boost to the image
and appeal of the point of sale.
c. Opportunities
Pisang Epe Ibu Hj. Sukmawati is in an excellent position to take expansion
opportunities. The popularity it already has provides a strong foundation for
opening new branches. By identifying strategic locations and designing
effective marketing strategies, the business can reach more customers,
expand its geographical coverage, and substantially increase its market
share.
d. Threats
The biggest threat to the business arises during the rainy season, especially
between November and February. A decrease in the number of buyers during
this period is a major risk that needs to be addressed. Therefore, it is
necessary to develop an inclusive strategy, perhaps by bringing online
promotions, collaborating with grab so that shoppers can order online at
home and this will mitigate the impact of the possible drop in revenue.

2.4 Students interact with workers at the observation location


Students who conducted interviews with this epe banana seller, they did
so in a relaxed atmosphere. So when students who made observations to this
epe banana seller, initially asked permission to conduct an interview with the
owner of this epe banana business and Mrs. Hj. Sukmawati as the owner of this
business was open and talkative. So we conducted the interview quite casually
and calmly. During the interview, the owner of this business really provided
information that was acceptable to us as students who made observations at the
selling place.

The results of the interviews we conducted were that we obtained


information about what the first business carried out by Mrs. Hj. Sukmawati,
around what year she started her business, how much capital she used, how her

business developed, what obstacles she experienced while running the
business, and some other information.

2.5 Suggestions and Solutions given by Students to Sellers


To add toppings to Pisang Epe' to attract customers' attention and
develop flavor variations, you can start by compiling a list of unique and
interesting toppings. For example, nuts, chocolate sauce or grated cheese can
be interesting options. Experiment to determine the best combination of
toppings that can enhance the appeal of your product.
Furthermore, for easy ordering from home, you can utilize the Grab
App or local courier services. Make sure to provide efficient and reliable
delivery options. Periodically evaluate the performance of your courier
partners and ensure a smooth delivery process to maintain customer
satisfaction.
Social media is a very effective tool for promoting products. Utilize
platforms such as Instagram, WhatsApp, and Facebook to share attractive
pictures of your new topped Pisang Epe'. Include an interesting and clear
description of the uniqueness of your product. Also, do special promotions or
discounts for customers who order through social media to increase
engagement and traction.
Integrate customer feedback from social media platforms and delivery
services in continuous improvement. By combining innovation in taste and
effective promotion, you can create a satisfying customer experience and build
a loyal customer base.

CONCLUSION

Pisang Epe, a business run by Mrs. Hj. Sukmawati, has become an integral
part of Parepare's culinary heritage. Although it cannot be ascertained exactly when
the business started, its development can be seen from the change in sales focus,
initially from various fried foods to specializing in Pisang Epe. With limited initial
capital, Mrs. Aji Sukmawati managed to create innovative variations of Pisang Epe
flavors and toppings, making it a major attraction in the local market. Smart
management decisions, such as employee recruitment and the use of quality
ingredients, have helped maintain the authenticity of the product's flavor and
improve operational efficiency.

Epe's beachfront selling location provides a unique culinary experience,


with a combination of delicious flavors and attractive ocean views. It is not just a
place to sell food, but also a part of the culture and natural beauty that is appreciated
by visitors. The success of this business lies in developing unique flavors and
significant consumer support. The SWOT analysis revealed that the main strengths
of the business are the unique flavors and consumer support, but there are still
weaknesses that need attention, especially related to the unrenovated condition of
the carts.

Student interviews with Mrs. Hj. Sukmawati provided a deeper


understanding of the history of the business, its development, and the obstacles
faced. Her openness and friendliness facilitated a relaxed and informative interview.
The conclusion of this interview suggests that the success of this business is not
only based on the culinary aspect, but also on positive interactions with customers
and the sustainability of local culinary heritage.

The suggestions and solutions provided by the students offer a fresh outlook
to improve the Pisang Epe business. Ideas, such as adding new toppings, utilizing
app delivery services, promotion through social media, and improvements to sales

carts, can help expand market share and maintain the competitiveness of this
business. Overall, the success of Pisang Epe Mrs Hj. Sukmawati shows that
innovation, efficient management and responsiveness to customer needs are the
keys to success in running a local culinary business.
