تعمل االحماض المركزه مثل حمض الكبريتيك والهيدروكلوريك المركز على تحلل السكريات الثنائيه والقليلة والعديده التسكر
الى مكوناتها من السكريات االحاديه عن طريق تكسير الروابط الجليكوسيديه فيما بينها
These acids also work to remove water from monosaccharides, and the result is
compounds called furfural derivatives, which is a five-ringed unsaturated organic
molecule. This is confirmed by conducting several tests, including Molisch’s
reagent, which is an alcohol solution of an aromatic organic substance called
phanapthol, which is added to A solution of sugar in an acidic medium consists
of concentrated sulfuric acid, which with furfural forms a complex compound
with a purple color, as shown by the following equation.
كما تعمل هذه االحماض على ازاله الماء من السكريات االحاديه فيتكون نتيجه ذلك مركبات تسمى مشتقات الفورفورال وهو
جزيء عضوي غير مشبع خماسي الحلقه ويتم التاكد من ذلك باجراء عده كشوفات من بينها كاشف مولش الذي هو عباره عن
محلول كحول لماده عضويه عطريه تسمى الفانافثول حيث يتم اضافته على محلول السكر في وسط حمضي مركز من
حمض الكبريتيك الذي يكون مع الفورفورال مركب معقد ملون ذو لون ارجواني كما يتضح من المعادله التاليه
معقد ذولون ارجوان مركبات الفورفورال تسخين حمض كبريتيك مركز+ ماده كربوهيدراتيه
Experiment steps خطوات التجربه
2- Add three drops of Molisch’s reagent to each tube, then shake the tube well

Experiment-1: iodine Test:
Most polysaccharides react with iodine to give each of them distinct colors without
decomposing their constituent structural units.
Starch binds to a high degree with iodine and gives a dark blue color, while glycogen
binds with iodine and gives a reddish-brown color.
تتفاعل معظم السكريات العديده مع اليود لتعطي الوان مميزه لكل منها دون اللجوء الى تحللها لوحداتها البنائيه المكونه لها
فيرتبط النشا بدرجه عاليه مع اليود ويعطى لون ازرق داكن بينما يرتبط الجاليكوجين مع اليود ويعطى لون بنى محمر

A dark blue color appears, which disappears somewhat after adding acid and heating,
and this color returns to appear again after cooling.
يظهر لون ازرق داكن يختفي الى حد ما بعد اضافه الحمض والتسخين ويعود هذا اللون للظهور مره اخرى بعد التبريد
Conclusions االستنتاجات
Due to the linking of the starch chains with iodine, the blue color appears, and as a
result of the hydrolysis of the starch in an acidic medium and its disintegration after
heating into individual molecules of glucose, the color of the iodine changes, which
explains the disappearance of the blue color and its return again.
نظرا الرتباط سالسل النشا مع اليود الى ظهور اللون االزرق ونتيجه لتحلل النشا مائيا في وسط حامضي وتفككه بعد
التسخين الى جزيئات منفرده من سكر الجلوكوز فيتغير لون اليود مما يفسر اخنفاء اللون االزرق وعودته مرة اخرى
- This test is used to differentiate between reducing and non reducing sugars.
- A reducing sugar reacts with Fehling's reagent in alkaline medium to form an orange to
red precipitate. Fehling's reagent is commonly used for reducing sugars but is known to be
not specific for aldehydes.
- Positive result is detected by reduction of the deep blue solution of cupric (II) to a red
precipitate of insoluble cuprous oxide (Cu2O).
Materials
• Sodium hydroxide — 50 g
Method:
Mix 2.5 ml of solution A with 2.5 ml of solution B in a test tube. Add 10 to 50 mg of
each sugar > heat the mixture in BWB boil for 5 to 10 min.
