This recipe describes how to make majkine kifle, which are phenomenal, soft, flaky, aromatic and beautiful pastries that require little time to make. The dough is made from milk, water, yeast, oil, flour and salt. Each rolled out piece of dough is brushed with melted lard or margarine and oil before being tightly rolled and placed on a baking sheet. Before baking, the kifle are brushed with an egg and milk wash and topped with sesame seeds, caraway or to taste. They are baked for about 10 minutes until golden brown.

MAJKINE KIFLE

Fenomenalne kiflice! Mekane kao duša, lisnate, mirisne i


prelepe! Zahtevaju malo vremena, ali oko dobrih stvari se i
treba potruditi ;)
Recept je od jedne prave domaćice sa Coolinarike, Bane,
a ovako ih pravi njena mama pa otuda i naziv. Probajte ih
obavezno!

Potrebno je:
(original recepta)
testo
250 ml mleka
250 ml vode
40 g svežeg kvasca
100 ml ulja
800-900 g brašna
1 kašika soli
1 kašika šećera
za premazivanje kiflica
oko 1,5 dl topljene svinjske masti (može i margarin, ali uz
dodatak ulja)
gornji premaz
1 jaje + kašika mleka
so, kim, susam
oko 50 gr margarina

Priprema:
Testo je veoma jednostavno i priprema se na klasičan
način. Od navedenih sastojaka umesite testo i ostavite da
nadođe.
Nadošlo testo podelite na 20-ak jufkica. Uzimajte jednu
po jednu jufkicu i razvijajte je u obliku kiflice, ali sa malo
zaobljenim krajevima, vidi se na slikama kako.

Svaku razvijenu kiflicu premažite otopljenom mašću ili


margarinom otopljenim sa uljem, sačekajte par minuta da
testo malo upije pa rukama razvlačite testo. Najboje je da
stavite kiflicu na kraj radnog stola, pustite da uži kraj visi
dok širi ostaje na stolu, i onda desnom rukom motate, a
levom razvlačite, s tim što povlačite testo unazad kako bi
što čvršće i tanje umotali kiflicu.
Stavite ih na papirom obložen pleh i premažite jajetom
umućenim sa kašikom mleka, posipite susamom, kimom ili
po ukusu i ostavite 15-ak minuta da odstoje pre pečenja.
Zagrejte rernu na 250 st i pecite kifle oko 10 minuta na
jakoj vatri, nikako ne smanjujte. Kad dobiju zlatnu boju,
gotove su, izvadite ih i premažite kockicom margarina ili
ako vam je preostalo od premazivanja, samo pređite
četkicom odozgo. Kiflice će dobiti lep sjaj i biće još
mekanije.
