SHEPHERDs PIE

INGREDIENTS
500grms lamb mince
1 carrot peeled and grated
1 tbsp oil
1 onion finely chopped
2 sprigs fresh thyme
1 tsp mixed herbs
1 bayleaf
Black pepper and salt
2 tsp garlic crushed
2tbsp flour
2 tbsp tomato puree
11/2 cup vegetable stock

METHOD
1. Heat the oil in a large saucepan and add the onion
garlic thyme bay leaf mixed herbs and carrot.
2. Cook over medium heat for 5 mins,add the lamb and
cook for another 5 mins stirring until lamb has browned.
3. Add the flour and cook for two minutes ,then stir in the
vegetable stock tomato puree.
4. Season with salt pepper to taste
5. Cover and simmer on low heat for 15 mins until reduced
and thickened
6. Remove from the heat and allow to cool
7. In the meantime prepare the mashed potatoes

MASHED POTATOES
8 medium potatoes
2 tbsp butter
4 tbsp milk
A tbsp. parsley chopped
Salt and pepper

1. Boil potatoes,drain water add milk,baking powder,butter


season with salt and pepper chopped parsley and mash
until creamy.
2. Heat oven to 180 deg celcius
3. Transfer the lamb mixture to an ovenproof dish, spoon
over the mash and spread evenly to cover
4. Bake in the oven for 25 to 30 mins until the top has
browned.
5. Serve with green salad
