SIMPLE VEGETABLE PILAAU

INGREDIENTS
2 cups rice
21/4 cups water
1tsp salt
Peas cup
cup corn frozen
cup diced carrots
2Hard boiled eggs sliced(optional)
cup water
2tsp whole jeera
1 onion sliced
2 tbsp margarine melted

METHOD
1. Place the rice,21/4c water and salt into a pot to boil
until cooked
2. Drain.
3. Boil the peas and carrots separately in salted water
until almost cooked,
4. Drain.
5. Place half of the rice in a pot,then arrange half of the
carrots,corn and peas on top of the rice.
6. Cover with the rest half of the rice.
7. In a frying pan add margarine or butter and fry the jeera
and the sliced onion until golden brown
8. Sprinkle 3tbsp water on top and steam until rice is fully
done.
9. Serve the rice on a large platter and decorate with rest
half of the carrots,peas and corn and sliced boiled eggs
10. Sprinkle the fried onions and jeera.
11. Garnish with chopped coriander leaves.
12. Serve with curry of your choice
