Tổng quan về kẽm
1.1. Giới thiệu chung
Là 1 khoáng chất vi lượng nhưng thiết yếu.

Là nguyên tố vi lượng phổ biến thứ 2

(sau sắt).

Kẽm đóng vai trò sinh học quan trọng

đối với con người: Kẽm tham gia vào cấu
trúc của tế bào, là thành phần cấu tạo nên
hơn 80 loại enzym khác nhau.

Xúc tác nhiều phản ứng biến dưỡng trong

cơ thể
1.2. Phân bố của kẽm trong cơ thể
Kẽm được tìm thấy trong
gần 100 loại enzym đặc
biệt.
 1.3. Chức năng của kẽm
 Ở não kẽm có nồng độ cao trong não ở vùng Hồ Hải Mã (hippocampus),
vỏ não, bó sợi rêu...
 Kẽm điều hòa chất chuyển vận thần kinh,
 Kẽm giúp vận chuyển canxi vào não
 Kẽm điều hòa chức năng nội tiết tố của tuyến yên, sinh dục, thượng thận
 Kẽm phân bổ vào da tóc, móng giúp chúng phát triển bình thường
 Kẽm giúp tổng hợp - bài tiết hormone tăng trưởng làm tăng cường khả
năng miễn dịch, chống nhiễm khuẩn
1.4. Nhu cầu kẽm trong cơ thể

 Nam giới trên 14 tuổi: 11 mg

kẽm/ 1 ngày.
 Phụ nữ trên 19 tuổi: 8 mg kẽm/ 1
ngày.
 Phụ nữ có thai: 11- 12 mg kẽm/ 1
ngày.
 Phụ nữ đang cho con bú: 11- 12
mg kẽm/ 1 ngày.
1.5. Thừa kẽm gây tác hại gì?

● Ngộ độc kẽm với biểu hiện: sốt, ho, ớn lạnh, nhức
đầu
● Buồn nôn và nôn
● Rối loạn tiêu hóa, đau bụng, tiêu chảy
● Đắng miệng
● Giảm HDL- cholesterol, tăng LDL- cholesterol
● Cản trở hấp thu đồng, sắt
1.6. Hậu quả khi thiếu kẽm
 Ảnh hưởng thần kinh
 Rối loạn hấp thu và chuyển hóa các chất như
 Suy giảm miễn dịch, cơ thể dễ nhiễm trùng, viêm
nhiễm,...
 Rối loạn nội tiết
 Chán ăn, mất cảm giác ngon miệng, rối loạn tiêu hóa.
 Thiếu kẽm gây ảnh hưởng nghiêm trọng đối với sự phát
triển của thai nhi và trẻ em.

Các enzyme chứa kẽm

2.1. Carbonanhydrase
Các anhydrase carbonic (hoặc cacbonat

 Điều chỉnh độ pH
• Carbonic anhydrase đóng vai trò
trong việc điều hòa pH máu,
giúp tăng tốc độ trao đổi
CO2 + H2O ↔HCO3- + H+ đảm
bảo cân bằng cân bằng được
duy trì nhanh chóng.
